Pear Dressing (& Favorite Salad Ingredients)

Pear Dressing

yield: 10 SERVINGS

Ingredients

  • 1 ripe pear, peeled and chopped
  • 1 to 2 cloves garlic, either minced or pressed
  • Freshly squeezed lemon juice (from 1 lemon)
  • 1/3 cup white vinegar
  • A few drops of Stevia (optional)
  • 1 tablespoon of mustard
  • 1/2 teaspoon salt
  • 1 teaspoon pepper
  • 1/2 cup olive oil

Directions

Blend everything (but olive oil) in Vitamix or blender.

Once blended, drizzle the olive oil slowly into the dressing and continue to blend until combined.

I have never been a huge fan of store-bought salad dressing. The various flavors on the market always sound so delicious and then once poured over my salad… well, they never taste nearly as good as I thought they would. For the past few months, I have been making homemade salad dressing or just using olive oil with freshly squeezed lemon juice and a little salt and pepper. It’s pretty simple, but in my opinion, better tasting and better for ya than store-bought.

Also, I have been so adventurous with my salads lately! I look in the fridge and basically throw in any veggies and fruits I have on hand… nothing is off-limits. Tonight I threw in tomatoes, apples and walnuts. I LOVE throwing nuts in salad… so yummy! Some other ingredients that tend to be in lots of my salad creations – red onions, spinach, avocado, berries, carrots and cucumbers. And one ingredient that I literally throw in most salads is fresh cilantro… I love the flavor it adds. Give it a try and let me know what you think!

Also, I’d love to hear what your favorite salad ingredients are. I am always looking for new ideas to change-up the salads we eat on a regular basis.

    My fav: spinach, red or yellow peppers, raspberries, pecans and feta with a maple dressing…yum!

    I often use 1/4 C cottage cheese for dressing, because I also do not like store bought dressings.

    Sliced Bosc pears are great in salads, they are somewhere between and apple and a Bartlett pear on the hardness/sweetness scale. Also they do not turn brown like the Bartlett pears.

    Thanks for posting this recipe! I tried the dressing out a couple of days ago. The mustard flavor was a little strong – think I will half it next time. Overall though – I really liked it! (BTW – I love that you are posting recipes from your Paleo diet!)

    What a total waste of ingredients! I wanted a salad dressing that tasted like pears, what I got was a dressing that tasted like vinegar and mustard. Horrible recipe!
