Spaghetti Squash “Bowls” with Meatballs & Sauce

I am just in love with this super simple, delicious and creative recipe idea that I spotted over on Yummy Mummy… and yes, her pictures are far better than mine!
Basically you take a spaghetti squash, cut in half length-wise, drizzle olive oil on both sides, then bake at 400 degrees cut side down for about 35 minutes. Take out, let cool for a teeny bit and then take a fork to pull up all of the “spaghetti”.

Now you can top with sauce, meatballs, Romano cheese, basil… basically anything that you would normally top pasta with. Once finished, throw back in the oven and bake for just a few minutes. Seriously, so good and so easy!

You can bake the squash whole (uncut) & just cut it when it’s finished baking..I’ve done both & haven’t noticed much of a difference in taste/texture/donenes, etc

I soften it up a bit by microwaving it for about 5 minutes….then I cut and bake.

Microwave it after poking it several time first. Cook it for a similar amount 15 min. The cut is still hard at the stem part. Hope this helps!

Yes, tonight I found a new way to cut speghatti squash. On a cutting surface, insert a large serrated knife and turn/cut the squash~ zipping around it, so to speak. This method as opposed to trying to cut straight through.

Collin, are you still doing Paleo? How often do you add dairy to your diet? I’m having a hard time eliminating my greek yogurt & cheese

Yep… I am eating primarily Paleo. However, I have added some dairy back into my diet. I will put a tiny bit of heavy cream in my coffee in the morning and then I occasionally use feta cheese to top salads and Romano cheese for this dish and others like it. I also will snack on Gouda cheese… love it!

I ordered a spaghetti squash and marinara dish at Ruby Tuesdays last Saturday night. It was really good and I thoroughly enjoyed it. They used a real heavy, thick sauce to complement the light taste of the squash and I think that was a good idea.

This looks delish! Thanks for posting it, I’ve already bookmarked it. I haven’t tried it with red sauce before so I’m definately trying it. I tried just using butter and parmesean cheese and it was too rich for me. I think this will be really good. And it’s so creative!

Spaghetti Squash is also delicious if, after you bake it, you pull out all the “spaghetti” and throw it in a pan with a little bit of butter, grated cheese, and fresh herbs. It’s amazing how good it tastes. You don’t even need a lot of butter or cheese, just a tad. It’s so flavorful.

I’m not sure where to post this, but cooking post sounds good to me! I received my VitaCoast order today, I had ordered coconut oil since you talk about it in some of your recipes. When I opened it, it was all liquid; my question is it supposed to be like this, from what I see, other peoples are more solid. Also, do I need to store it in the refrigerator or will it keep in the cabinet? Thank you for answering!

It depends on the temperature. The colder it is, it will turn back to a solid. The hotter it is, it will turn to liquid. Either way its OK! I keep mine on the kitchen counter.

You can also microwave it if your in hurry! Cut in half, skin side facing up, in a inch of water for about 8 minutes. I don’t notice a difference. I love to top it with beef bolognaise!

Collin check out paleomg.com her blog today has a recipe for Spaghetti and meaball Bites… same concept just prepared a little diffrent for end result! You make in muffin pan or silicone muffin cups!! So cute for the kids!! Looks like an egg in a bird nest!

Hi Collin. I tried this last night. I loved it! But two things my kids didn’t like…maybe you can help me with. #1 – it was a bit watery. What do I do to reduce that? #2 – they like their noodles soft so these were a bit “crunchier” than they like. Is there anything I can do to help that? Thanks.
