One of the very first meals I learned to make early in my marriage was a simple slow cooker pot roast. Even to this day, it’s my hubby’s favorite and he still gets really impressed (shhh – don’t tell him it’s so easy to make)! This is how my mom makes pot roast; and on a chilly day, it’s so comforting!

Easy Slow Cooker Pot Roast

(adapted from the back of the Lipton Onion Soup box)

*2-3 pound pot roast
*1 packet of onion soup mix
*1 can stewed tomatoes
*2 carrots peeled and chopped
*6 small potatoes chopped ( I like red and yellow potatoes)
*1/2 cup water

Directions:

Brown the outside of the roast with a little oil in a pan on the stove for about 5 minutes. Mix the tomatoes, water, and onion soup mix and pour over roast, carrots, and potatoes. Cook on low for about 8-10 hours until tender.

*Tip- If you’re thinking of making your own onion soup mix, here is a recipe to do just that!
