Red Velvet Box Cake Cookies

Looking for an easy cookie recipe this holiday season to bake for your family or perhaps those fun cookie exchanges you may be attending? Bake these yummy red velvet cookies using a box cake mix! The powdered sugar gives them a pretty red crinkle cookie look and they turn out so chewy and soft. Note: For an equally delicious but different variation, use a lemon box cake mix instead of Red Velvet.

Red Velvet Box Cake Cookies:

(Makes approx. 24 cookies) from Allrecipes.com

* Red Velvet Box Cake Mix
* 2 eggs
* 6 tablespoon butter, melted
* 2 teaspoons lemon zest
* 3/4 cups powdered sugar
* 1 teaspoons corn starch

Directions:

Heat oven to 370 degrees. and place parchment paper over two cookie sheets.

Mix powdered sugar and corn starch together in a small bowl and set aside.

Beat the eggs, butter, and lemon rind together with a mixer first then mix in the box of cake mix.

Roll into one inch bolls and coat with the powdered sugar mixture.

Place balls on cookie sheet 2 inches apart.

Bake for 7-9 minutes and let cool on a cooling rack.

When logged into your account, you will see the HIP List icon at the bottom of every post if you are viewing Hip2Save.com in classic view.

If you prefer to view Hip2Save.com in river view, you will see the HIP List icon located on every post above the post title and to the right.

If you're wanting to print a certain deal, blog post, or the Weekly Store Matchups from your HIP list, click on the small blue printer icon in the upper right corner of the HIP list. This will allow you to customize the information that you want or don't want to include when printing from your HIP list so you're only printing the information that's most important to you! If there are deals (or portions of deals) that you are not interested in printing, just click on the red x button to remove them. To restore a section, click on the green arrow icon in the upper right hand corner.
