If you love homemade jam, but you want to bypass the canning process, then this post is for you! Take advantage of inexpensive and ripe summer strawberries (and other berries!) and make your own easy homemade freezer jam with no canning required! This jam tastes delicious, calls for just four ingredients, and is super budget-friendly as it ends up being much less expensive than store bought jam. Plus, let the kids help you mash the strawberries and it can be a fun indoor summer activity. 🙂
Strawberry Freezer Jam (Low Sugar Recipe)
(Adapted from Diabetic Living Summer 2014)
2 cups ripe strawberries, crushed (about 1 and 1/2 pints of fresh strawberries)
3 tablespoons Pectin for low sugar recipes
1/2 cup orange juice
1 and 1/4 cups sugar
Clean and crush strawberries with a potato masher in a large bowl.
Pour sugar, pectin and orange juice in a medium sized saucepan on the stove. Bring to a boil and let boil for 1 minute. Stir well and be careful mixture doesn’t burn.
Take off heat, add strawberries and combine well. Pour into containers leaving a 1/2 inch space at the top for expansion. Cover with lids and let sit on the counter for 24 hours to set. Store in freezer and then thaw a container in fridge when you’re ready to use.
Notes: In its frozen state, this jam should be good for at least 6 months when stored properly. Once open, the jam will keep in the fridge for 1-2 weeks. For this reason, I prefer to store my jam in smaller Tupperware containers with tight lids.
Freezer jam doesn’t last long in our house – my kiddos enjoy making toast and sandwiches with it! And keep in mind that you can also make different fruit combos like mango strawberry, raspberry /strawberry, etc.
Have you made freezer jam? What kind does your family love?
