      I think too big a deal is made with regard to fat in our diet (as long as it’s in moderation, of course). My great grandma lived into her mid 90’s eating cookies that she made with bacon grease! 😊 n

        Nothing wrong with fat, but lard would make it unsuitable for vegetarians.

        They also make a vegetarian corn muffin mix. Linda’s comment (below) is well-stated; even if I can’t use a freebie, I still get it and donate it. Someone else might appreciate it.

          I have never seen a vegetarian version, is it the same brand?

            Yes, and the Jiffy website has a “store locator.”

              Sounds good, but they could not locate a store within 100 miles of me that sell it.

      Using a product containing lard is a personal choice. As M stated, my grandmother too saved her bacon fat/grease to use in ALL her other cooking. And when I was very young, my mom also cooked occasionally with the grease she saved (times changed) … And I grew up on this Jiffy Corn Mix. Whose to say it’s any worse (or better) than the GMO Oils laden in many other products today? It’s all preference and choice … Reading labels, being aware, and choosing what’s best for you. In my case. I’ll be purchasing this (or not since it’s free) and most likely donating it as Linda suggested.

      If anyone who wants to use this “free” product in a great “Corn spoon bread” recipe, I’ll be happy to post the recipe. It is different than corn bread, it’s soft in the center with a creamy corn taste and the most delicious thing I’ve had in recent years!

    Hi Lala, This is an old family recipe with not many “directions”. It is delicious though! SPOON BREAD (CORN BAKE)
    1 can drained, whole kernel corn
    1 can creamed corn
    1 box Jiffy corn muffin mix
    1 stick margarine
    2 eggs
    1-8 oz. sour cream
    1/3 cup of sweetener (sugar or splenda)
    Mix all the ingredients except corn muffin mix with a mixer to break down some of the whole corn. Then add the muffin mix, stirring only until mixed.
    Bake at 350 degrees for 35-50 minutes. Will not be as firm as regular corn bread but should be cooked until center is firm. Enjoy!

      This is SO good!! I could eat the whole pan myself! Everywhere I take it everyone loves it, plus it’s super easy to make. My friend makes it without the sugar and adds shredded cheddar and bacon. Super yummy too!
