2.5-3 pounds of boneless chicken thighs or a mix of thighs/breast meat
1/2 cup honey
1/4 cup Dijon mustard
4 cloves minced garlic
1/4 cup soy sauce
1/4 teaspoon black pepper
few sprigs of fresh rosemary plus some for garnish

Easy Honey Mustard ChickenDirections: Spray slow cooker with nonstick spray and place chicken inside. Whisk together honey, soy sauce, garlic, mustard, and pepper in a small bowl and pour over chicken in slow cooker. Place a few fresh sprigs of rosemary over the top. Cover & cook chicken on low setting for about 6 hours or on high setting for about 4 hours or until chicken is tender. If possible, check chicken several times and stir.

To finish: Remove chicken from slow cooker and set on a plate or cutting board leaving the sauce in the slow cooker. Stir cornstarch with water in a cup and whisk it in with the sauce. Shred chicken and put it back in slow cooker for another 20 minutes or so until the sauce thickens. Serve chicken and sauce on top of rice, noodles, or even in sandwiches! Makes about 4-6 servings.
