That dip was a hit at our family Christmas party. Make sure you drain the ‘chokes really well before chopping, cuz it can make the dip watery.

Here’s my family’s favorite dip that uses parmesan (with my adjustments to make it lighter):

    Spinach Artichoke Dip 6-11-14
    Ingredients:
    4 cloves garlic
    ***or 1 tsp garlic powder
1 (10 ounce) package frozen chopped spinach, thawed and drained
2 (4 ounce) jars artichoke hearts, drained and chopped
1 (15-16 ounce) jar light Alfredo-style pasta sauce
1 cup shredded 2% mozzarella cheese
    1/3 cup grated Parmesan cheese
1 (8 ounce) package light or fat free cream cheese, softened

    Directions:
    1. Preheat oven to 350 degrees F (175 degrees C). Butter or spray mix 8×8 inch baking dish.
    2. Place garlic in a small baking dish. Bake in the preheated oven 20 to 30 minutes, until soft. Remove from heat. When cool enough to touch, squeeze softened garlic from skins.
***OR skip this step and use 1 tsp garlic powder.
    3. In a bowl, mix garlic, spinach, artichoke hearts, Alfredo sauce, mozzarella cheese, Parmesan cheese, and cream cheese. Transfer to your baking dish.
    4. Bake in the preheated oven 30-45 minutes, or until cheeses are melted and bubbly. Serve warm.

*** IF making ahead and refrigerating, add 20-30 minutes to the baking time.
