Take advantage of inexpensive berries and whip up some easy homemade jam using healthy Chia seeds. Not only are Chia seeds loaded with fiber, protein, and Omega 3 but they also do a great job of thickening homemade jam! Use this yummy jam on toast, yogurt, oatmeal, and of course peanut better & jelly sandwiches.
Easy Chia Seed Berry Jam
(Recipe Idea from Lexi’s Clean Kitchen)
*2 cups berries (I used a mix of blueberries, strawberries, & raspberries)
*2 Tablespoons raw honey (or choice of sweetener)
*2 Tablespoons water
*2 Tablespoons Chia Seeds (I found a bag for $2.99 in the produce section of my local grocery store)
Directions: In large bowl, mash or blend berries and add water (I used a hand blender). Transfer to saucepan and cook over medium heat for about five minutes and then add honey. Cook for another 5 minutes turning up heat until bubbling. Stir in Chia seeds and let cool. Pour into jelly jars and refrigerate. The mixture will thicken up beautifully. Keep in fridge for about 1-2 weeks.
