Easy and Quick Homemade Vanilla Almond Granola Hip2Save.com

Making homemade granola can cut down on your grocery bill and also happens to be super easy! Plus, I love that you can control the amount of sugar added and can customize to your liking by adding in your favorite nuts, seeds and dried fruits. In addition to making a great cereal, granola can be added to yogurt and fresh fruit for a breakfast parfait and makes a great snack all on its own!

Homemade Vanilla Almond Granola

Adapted from Chow.com

Ingredients:

3 cups Rolled Oats
1/2 teaspoon Cinnamon
2 Tablespoons Brown Sugar
1 teaspoon Vanilla Extract
1/4 teaspoon Salt
1/3 cup Honey
1/4 cup Coconut Oil
1/2 cup sliced Almonds

Directions: Mix oats, brown sugar, cinnamon and salt in a bowl and set aside. In a separate bowl, mix coconut oil, honey, and vanilla. Pour the liquid mixture over the oats mixture and mix until evenly coated. In a thin and even layer, spread out over a Silpat Non-Stick Baking Mat or a cookie sheet covered in parchment paper. You may need to separate into two baking sheets to ensure oats toast evenly and get that crunchy texture. Bake at 325 degrees for about 15-18 minutes or until golden brown. Take out of oven, toss with nuts and/or dried fruit, and let cool. Texture will become crunchy as it cools. Store in airtight container.
