Baked Ham & Egg Cups (Low Carb Breakfast On The Go Meal)

Baked ham & cheese cups

Here’s an easy make-ahead breakfast idea that will come in handy for those busy school/work mornings. Bake these yummy ham and egg cups in a muffin tin for a handy breakfast on the go. Swap out veggies based on what you like and customize with ingredients your family loves.

Baked Ham & Scrambled Egg Cups

Ingredients

10 large eggs
12 slices of deli ham
1/2 cup cheddar cheese, shredded
1 and 1/2 cups diced veggies (I used bell peppers, red onion, and green onion)
nonstick spray for muffin tin

How to Make Easy Ham & Eggs in Muffin Tins Hip2Save.com

Directions: Spray muffin tin with nonstick spray. Place a piece of ham in bottom of each cup. Add a little shredded cheese to each cup. Whisk eggs together and pour into each cup.  Chop and sautee veggies for a few minutes with a small amount of olive oil and add salt & pepper to taste. Add a little of the veggies to the top each cup. Bake at 400 degrees for about 15 minutes until eggs are set. Makes 12 individual sized cups

These yummy cups can be quickly reheated in the microwave for an easy and filling breakfast.

If you're wanting to print a certain deal, article, or the Weekly Store Matchups from your HIP list, click on the small blue printer icon in the upper right corner of the HIP list. That will allow you to customize the information that you want or don't want to include in your HIP list so you're only printing the information that's most important to you!

If there are deals that you are not interested in keeping on your list, just click on the minus button to remove it.

Now, just print your customized HIP list whenever you're ready to go shopping and snag some "Hip" deals!
