If you’re looking for a tasty soup recipe that’s also easy to prepare (especially for those busy weeknights!), try this hearty soup that features sausage and store-bought Tortellini! This makes for such a comforting meal and the leftovers taste even better the next day!
Italian Tortellini Soup

12 oz. Chicken Sausage, casings removed
1 – 9oz package store bought cheese Tortellini
1/2 medium onion, chopped
6 cloves garlic, diced
1 can stewed tomatoes, sliced, undrained
2 cans (14-1/2 ounces each) reduced-sodium chicken broth
1 and 3/4 cups water
6 oz. fresh spinach, coarsely chopped
1 teaspoon Italian Seasoning
1/4 teaspoon red pepper flakes
salt & pepper to taste
Directions: Crumble and cook sausage with garlic and onions until no longer pink in a large Dutch oven or pot. Stir in broth, tomatoes, and water and bring to boil. Add tortellini, and let boil for about 7 minutes until tender. Reduce heat and add spinach & seasonings. Yields about 6 cups.
