Let your slow cooker do the work overnight and wake up to a nice warm bowl of creamy oatmeal! This recipe provides such a yummy and EASY way to prepare a healthy and filling breakfast perfect for a lazy weekend morning or a busy weekday morning.

Slow Cooker Steel Cut Oatmeal

Adapted from FoodNetwork.com

Ingredients:

I cup steel cut oatmeal
4 cups water
1/2 cup half and half
1 tablespoon maple syrup
1 teaspoon vanilla extract
1/2  teaspoon ground cinnamon
*dried fruit and nuts for toppings
Steel Cut Overnight Oatmeal Hip2Save.comDirections: Whisk together all ingredients in a slow cooker. Cover and cook on low for 8 hours. Stir and serve in bowls with desired toppings – I topped with dried cranberries, figs, and walnuts. Serves 4. You can also cook oatmeal with dried fruit if you prefer, but I have some family members that won’t eat it that way.

Notes: Do not substitute rolled oats for steel cut oats. Steel cut oats are whole cut oats that have a chewy texture and take longer to cook than rolled oats so they will hold up in a slow cooker overnight.
