We get beef steers every year to finish on our pasture and have our butcher hang the carcasses for at least 2 to 3 weeks in his cooler. Beef allowed to hang has a much deeper delicious flavor than the low quality mass produced crap that you find in the supermarket. The color of homegrown meat is also vastly different, being a much darker deeper red. It doesn’t need a bunch of extra seasonings when you cook it either, usually just a lil’ salt and pepper:)
Last time I was at one of our favorite places to eat (in the world) they had these steaks listed on the menu. I didn’t try one but I would guess they would be good if they had them on the menu…HTH

Aged beef is so complicated supermarkets don’t even sell it. I am from Argentina so steak is a daily staple for dinner but the aged prime rib I had for valentine’s day in Atlantic City? Omg nothing has come close. It just changes all the flavors that you normally expect from a medium rare piece of meat. It took us an hour to finish dinner bc we were eating it so slowly. I am def picking up this deal.
