This delicious roast is Grade USDA Choice or higher, weights approximately 6.5 lbs (give or take 0.5 pounds), is aged 28 days for improved flavor and texture, comes individually wrapped and ships frozen but will arrive frozen or partially thawed.

The vendor is misleading the purchaser with “prime rib” which would indicate USDA prime, when in fact it is just a rib roast. Also, 28 day aged indicates wet aged, whereas you get superior flavoring by dry aged. Although they don’t indicate how the roast was aged, if it was dry aged, you’d be sure to know. $12/lb is not that great of a deal for USDA Choice.
This is prime rib, not prime beef. The term prime rib refers to the location from where the meat was cut, not the graded quality of beef. Their website states Choice or higher and avg 6.5 pounds. Most supermarkets are wet aged 4-10 days, these are 28. If you want dry aged, wrap it in cheesecloth and leave it in the fridge for 5 days minimum. I ordered this and cooked it last week for an early Father’s Day dinner. I received Choice, but 7.5 pounds and easily fed 7 people. Delicious!
