Quick Ham and Bean Soup Recipe

If you’re looking for a very quick and delicious last minute “Oops I Didn’t Plan Dinner Tonight” kind of recipe, check out this easy Ham & Bean soup using leftover ham, beans, and veggies! It’s super comforting and hearty with very minimal effort.

You could definitely alter it to your taste and add other veggies such as kale and green beans. The ham adds so much flavor so it doesn’t really need much seasoning. You can also substitute with beans you already have on hand as I had two cans of Great Northern and two cans of Pinto beans.

Quick Ham & Bean Soup

Adapted from TasteofHome.com

Ingredients:

3 medium carrots, sliced
3 celery ribs, chopped
1/2 white onion, chopped
2 tablespoons butter
4 cans (15-1/2 ounces each) great northern beans, rinsed and drained
4 cups chicken broth
2 cups cubed fully cooked ham
1 teaspoon chili powder
1 teaspoon minced Garlic
1/4 teaspoon pepper
1 bay leaf

Directions:

  • Add butter, onion, carrots, and celery to large saucepan and sauté until tender.
  • Add remaining ingredients and bring up to a boil.
  • Reduce heat and let simmer for 20 minutes.
  • Remove bay leaf and serve. Makes about 7 servings

This soup is YUMMY and flavorful! I loved being able to use some of our leftover holiday ham with simple pantry ingredients.

My family isn’t super thrilled when I serve soup in general, but they enjoyed this one and leftovers were great, too. You could definitely adapt this for the slow cooker by first sautéing veggies and placing everything into the slow cooker. Enjoy!
