Ingredients

Fathead dough:

  • 3/4 cup almond flour
  • 1 3/4 cups mozzarella cheese
  • 2 tablespoons cream cheese
  • 1 egg
  • 1/2 teaspoon Italian seasoning
  • 1 pinch salt

For the Pigs in a Blanket:

  • package of 8 hot dogs
  • sesame seeds or poppy seeds for topping (optional)

Directions

Preheat oven to 425 degrees F.

To make Fathead dough:

Combine almond flour and mozzarella cheese in a microwave-safe bowl. Add in cream cheese and cook in the microwave for one minute. Stir and then cook for an additional 30 seconds in the microwave. Then, mix in egg, salt, and Italian seasoning, and stir.

Separate dough into 8 sections and roll into balls.

Using your hand, flatten and roll each piece of dough around a hot dog.

Place on a parchment covered baking pan seam side down. Sprinkle sesame seeds over top, if desired.

Bake in the oven at 425 degrees for about 14-17 minutes until dough is cooked and slightly brown.

    Made these for the first time last night. OMG they are good. The dough is by far the best keto dough I have had yet. I did use a quarter cup coconut flour and 1/2 a cup almond flour and replaced the hot dogs with Johnsville Jalapeno Cheddar Sausage. These will be a weekly staple and the dough will be used for so many things.

    Is there a way to premake the dough and refrigerate? Has anyone tried this? I thought about making the dough the night before to prep it while my hotdogs thaw from the freezer.

    Holy Moley! So good! Added jalapeños and a little mozzarella on the inside. Topped them with Trader Joe’s Everything But the Bagel seasoning. I used larger sausage links so the dough only covered 6. But so delicious! Perfect keto breakfast! Thank you!

    Do I need to cool the dough down before working with it? it was a sticky mess when I made these and look like something out of a horror movie. They were super delish I used the little smokies with cheddar

    I just made these. They’re great! We are currently away from home without any scale, measuring cups etc so I had to eyeball everything. But I was lucky and they came out nice. I love the addition of sesame seeds.

    Very tasty! Some of mine did spread out in the oven, any suggestions on how to prevent the dough from doing that? But will definitely make them again.

      I am glad they are tasty! I am not super sure, but maybe try chilling them a bit before baking, and lower the temp a bit? This dough does tend to be flatter. Hope that helps!
