Simple Salsa

Re-inventing a summertime star!

Who doesn’t love to crowd around a giant bowl of chips & salsa at the family BBQ or neighborhood block party?! Let’s face it, salsa is a hit no matter how you spin it. Salsa is full of fresh and nutritious ingredients. It is versatile and very forgiving when trying new seasonings, flavors and varieties. I searched the Internet, inquired with friends, and flipped through my favorite cookbooks to find 3 unique salsa recipes that intrigued my taste buds.

Now I encourage you to take a little vacation from your normal salsa routine – Let’s see if you can make an old favorite new! Easy Blender Salsa

Ingredients

3/4  cup  chopped red onion
1/2  cup  minced fresh cilantro
1  (10-ounce) can diced tomatoes and green chiles, undrained (such as Rotel)
1  (10-ounce) can diced tomatoes with lime juice and cilantro, undrained (such as Rotel)
1  garlic clove
1 jalapeno (seeded according to heat preference)

Directions

Place all the ingredients in a blender, and process until smooth. Serve the salsa with tortilla chips.

Avocado Salsa (aka Guacamole)

Ingredients

3 avocados – peeled, pitted, and mashed
1 lime, juiced
1 teaspoon salt
1/2 cup minced onion
1 jalapeno seeded and cored
1/4 cup chopped fresh cilantro
2 Roma (plum) tomatoes, diced
1 teaspoon minced garlic

Directions

In a medium bowl, mash together the avocados, lime  juice, and salt. Mix in onion, cilantro, tomatoes, jalapeno and garlic. Refrigerate 1 hour for best flavor. Serve with tortilla chips.

Annie’s Fruit Salsa and  Cinnamon Chips

Ingredients

2 kiwis, peeled and diced
2 Golden Delicious apples – peeled, cored and diced
8 ounces raspberries
1 pound strawberries
2 tablespoons white sugar
1 tablespoon brown sugar
3 tablespoons fruit preserves, any flavor
10 (10 inch) flour tortillas
butter flavored cooking spray
2 cups cinnamon sugar

Directions

1) In a large bowl, thoroughly mix kiwis, Golden Delicious apples, raspberries, strawberries, white sugar, brown sugar and fruit preserves. Cover and chill in the refrigerator at least 15  minutes.

2) Preheat oven to 350 degrees F (175 degrees C).

3) Coat one side of each flour tortilla with butter flavored cooking spray. Cut into wedges and arrange in a single layer on a large baking sheet. Sprinkle wedges with desired amount of cinnamon sugar. Spray again with cooking spray.

4) Bake in the preheated oven 8 to 10 minutes. Repeat with any remaining tortilla wedges. Allow to cool approximately 15 minutes. Serve with chilled fruit mixture.

    Bean Corn Salsa

    15 oz can black beans, drained not rinsed
    15 oz can white shoepeg corn, drained
    15 oz can petite diced tomatoes with chilies, not drained
    ½ medium red onion, finely diced
    2 tablespoons cilantro
    1 tablespoon cumin
    ¼ cup olive oil & vinegar salad dressing. You can also use Italian or any vinegar based dressing.
    2 tablespoons lime or lemon juice

    Mix all ingredients and refrigerate overnight.

        Pineapple Mango Salsa

        1/2 of a Fresh Pineapple, diced
        1 fresh mango, diced
        Handful of Cilantro, chopped
        1/2 of a red onion, diced
        1 TBS of pickled or Fresh Jalapeno , diced (Use more if you like it hot)
        Salt and Pepper to taste
        1/2 Small Red Bell Pepper, diced
        1/2 Small Green Bell Pepper, diced

        Combine all ingredients and serve with tortilla chips or Grilled Chicken or Fish, or both like I did for dinner! Yum-Me!

    I make Annie’s Fruit Salsa all the time and it’s a real hit! (and a great way to use up fruits that are soon to go bad) If I am in pinch for time and cannot make the cinni. chips, I jjust buy a bag of cinni chips that are already made! Great post!

    I have a YUMMY and EASY Strawberry Salsa recipe that you will love! The ingredients sound strange together when you first look at it, but trust me it’s very good!

    Strawberry Salsa
    1 qt. strawberries
    1 green pepper
    1 green onion
    2 Tbsp. fresh parsley
    1/3 cup Catalina salad dressing

    Put everything but the strawberries in a food processor and pulse a few times. Add strawberries and pulse until you have small chunks of berries showing. Serve with tortilla chips!

    This is my recipe for green salsa

    3 green tomatoes cut in halfs
    1 garlic clove
    3 jalapeños(take seeds out)
    1/2 lemon
    some cilantro
    salt
    put the first 3 ingredients to roast in a little pan no water nothing just add salt so they roast not burnt then when ready put them in a blender add more salt and squeeze the juice of the lemon and add the cilantro bled and voila….zesty green salsa

    A trick I use is whatever salsa I make I put it on the stove on a low heat. I warm the salsa and that seems to bring out a lot more flavor. It works to with jar salsa, just remember to warm it not cook it. Enjoy.

    my favorite salsa recipe (measurements are an estimate, i just add some of each til it tastes good!)

    1 chopped tomato
    1 small handful banana peppers
    a small handful of pickles (i use sandwich stackers, much easier to chop up)
    1 onion, chopped
    1 green pepper, chopped

    mix up and enjoy! it’s so simple and AMAZING!

    1 pint of strawberries
    2 kiwis
    2 mandarin oranges
    1 large or 2 small apples
    1 can of diced pineapple
    1/4 cup lemon juice
    1/2 cup sugar
    2-3 sprigs of fresh mint
    whole wheat tortillas
    After peeling kiwis & oranges and cleaning apples & strawberries, dice them & toss with pineapple in the lemon juice. Finely chop mint & add to fruit mixture along with sugar. Toss again & store in covered dish in refrigerator for 1 hour. Fry up tortillas in a little bit of extra virgin coconut oil. You can toss tortillas in cinnamon & sugar immediately if desired (we like ours plain) & break into chip size pieces. Dip in fruit salsa & enjoy!

    The salsa recipe is similar to one our family makes OFTEN because it’s just so yummy, the kids devour it, and it’s super healthy! We make it in our Magic Bullet (the kids help), so the amounts are approximate, and can be very adjustable to taste…

    a bunch of grape tomatoes (we fill up the container 2/3 of the way full)
    half an onion
    a bunch of cilantro (as much as fills a small bowl, or as much my kids will prep for me because we prefer to take off the stem)
    the juice of one-two limes (that’s often dependent on how many kids are helping that day)
    a few turns of a sea salt shaker
    a small splash of EVO
    **jalapenos to taste if you want** – we skip that usually because kids don’t like the spice and we don’t need it because it tastes great without, too
    **a little garlic if we have some around and desire it**

    Put the lid on the magic bullet container (or throw it all in a blender) and blend away – as chunky or smooth as you’d like. It’s fresh, so the nutrients are really great, and it tastes awesome. I think it tastes best if it’s refrigerated a few hours before, so we often make it before lunch, have a little to taste and make sure it’s great, and then have it with dinner or the next day. It’s kept in our fridge up to 2 days, but hasn’t made it any longer because we always eat it up. Seriously. We put it on eggs, use it as a dip for quesadillas, use it as a dressing for salads, etc. Awesome. 🙂

    Yummy. I can’t wait till the weather warms up so my container veggies and herbs start really thriving!!!

    I also make Watermelon salsa with Habeneros for the sweet and spicy side- it’s great on Pork Chops or maybe even a side with steak 🙂

        A chef I used to work with gave me this recipe for Watermelon & roasted corn salsa.
        2 cups diced watermelon- seeds removed
        1 cup Roasted corn-you can grill ears of corn and then cutoff ears. (I have also cheated and used frozen corn that I heated in oven to give roasted taste/appearace)
        cilantro chopped very fine- I like to not use stems and use about a handful
        1 tablespoon brown sugar
        2 tablespoons lime juice
        1-2 jalapeno or serrano peppers depending on how hot you want
        a dash of garlic and a dash of salt
        Mix all and chill. Serve with chips or over favorite meats.

    Check the watermelon fire and ice salsa on allrecipes.com. I came across that recipe several years ago and thought is sounded nasty, but was rated high so I tried it. Make sure to cut the melon small and let it sit in a strainer for a while after cutting to get rid of some of the juice.

    For the fruit salsa you can use Stacy’s Cinnamon Sugar Pita chips. Boy are those things good with fruit salsa.

    I made “Annie’s Fruit Salsa and Cinnamon Chips” from Allrecipes.com a couple years ago for a church potluck and it was a HUGE hit!! Everyone loved it!! I immediately put the recipe into my recipe box (where only the best recipes go). I highly recommend it.
    If I remember right, making the cinnamon chips was a bit time consuming (which might have been because I made such a big batch!), but they were oh so yummy!! The salsa is also De-lish and easy to swap fruits out based on what you have on hand.

    For a very simple salsa recipe and for those that like a mild salsa (kids, maybe), minus chiles or peppers, I just take three ingredients and some spices and mix them together in my food processor….I find the Magic Bullet pulverizes it and we like it a little bit more chunky.

    3 or 4 Roma tomatoes, each cut into 8ths and then halved,
    a 1 inch thick slice of red onion, the circle of onion also cut into 8ths
    several tablespoons of cilantro leaves (this amount according to your taste)
    Put the above ingredients into the food processor and then sprinkle in some garlic salt or powder and some Morton’s Nature’s Seasonings and then pulse the food processor until the ingredients are the consistency that you like.

    This makes about a cup of salsa. We serve with chips or crackers and sometimes mix it into cottage cheese and serve with chips, crackers and cut up veggies. The cottage cheese is a change from the typical sour cream or guacamole base.
