Simple Vanilla Pudding Recipe

Ingredients

  • 2 and 1/4 cup milk
  • 1/2 cup white sugar (or substitute Splenda)
  • 3 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 tablespoon butter (Love me some real butter – not the fake stuff!

Directions

In medium saucepan over medium heat, add 2 cups of milk and heat until bubbles start to form.

While the milk is heating up, combine sugar, cornstarch, salt, and 1/4 cup cold milk in a medium bowl. Pour this mixture slowly into the hot milk and stir continuously. Keep stirring until the mixture is thick enough to stick to a spoon.

Finally, remove the pan from heat and stir in the vanilla and butter, then chill for at least an hour (possibly longer). Now get a spoon out and dig in!

So, I first want to apologize for just now posting a new Cooking with Collin. To be quite honest,  I’ve been slackin’ in the cooking department. Yep, my hubby has actually taken over quite a bit in the kitchen – gotta love him! 😀

Anyway, today I am going to show you how to make homemade pudding! …And let me say, homemade pudding is so much better that the boxed mixes you can buy in-store. Plus, making pudding from scratch is so simple and requires very minimal ingredients. I love pudding also because it is so versatile. You can add fruit, change the flavor and basically use items you have on hand to give it a little twist!

Hip Tip – Make sure to never let the milk mixture come to a boil as it will burn.

This is a simple recipe, but so delicious.

    think i’ll make this in chocolate! and btw, i LOVE organic valley products! they taste so good and they sell the best tasting chocolate milk hands down! taking your advice on the extract and ordered some, love good quality baking products!

    Wow! That was quick! I might have had a chance had I not taken so long trying to get a decent photo with me in it in case it was posted! LOL I wasn’t sure if a person had to be in it or just the pudding. 🙂 I made mine with soy milk and a little butter flavor because my son is allergic to milk products. Made those changes and it still tastes good. I was going to try a vanilla pudding recipe soon anyway so this was a time to do it. I have a great one for chocolate soy pudding. 🙂

    Wow, that IS simple! I will try that real soon! Does anyone know if it would work with 1% or Skim milk?

      It should work with 1% or 2% milk but I am not sure about fat free or skim. Although I made it with soy milk today and it set fine. So I don’t know if that really helps or not. 😉

      Hi Isabella,

      I actually got the recipe from a friend, but it does look similar to the recipe referenced (although, I think my recipe calls for more milk). I didn’t have issues with lumps, but I think the key is to very slowly add the pudding mixture into the hot milk, then make sure to continuously stir. Hope that helps! 🙂

    I was lookinf for a recipe for warm vanilla pudding to put over
    Baked apples. My mother always made this and I cant seem to get
    it right. She would warm it up when serving of course she made may
    apples to be able to serve company . Hope you can help////////

    This is the waY my grandmother made pudding many years ago! To make sure no lumps, mix the ingredients, other than the milk that is heating, in a shaker, and shake well, just like making gravy.
