Collin is right, this stuff is CRAZY good! I made it for a gathering at my Dads and people were fighting over it, lol. My Husband can eat the whole thing by himself so I make sure I get some before he knows I made it and the kids try and hide it,

    • Deb

I second that. Have made them several times since they were posted about the last time. Super good and easy.

    Hi everyone!

Here’s another recipe I like to make using cream cheese. I make this tortilla dip for parties and everyone loves it. It is from the “Mr. Food” cookbook. Very easy to make. Enjoy! 🙂

    Mexican Buffet

Just about everybody’s into Tex-Mex and this easy-as-a-snap casserole has to be the perfect blend ’cause everyone, the Do-Like-Tex-Mexers and the Don’t-Like-Tex-Mexers-loves it. Made ahead, rewarmed, and served with tortilla chips, it’s all the Mexican anyone could hope for. This is a contest winner and you’ll see why. So what if it’s simple!

    What You’ll Need:

1 cup (4 ounces) shredded mild or sharp Cheddar cheese
1 cup (4 ounces) shredded Monterey Jack cheese
1 cup (8 ounces) sour cream
    3 ounces cream cheese, softened
1 can (16 ounces) refried beans
1/2 cup picante sauce (any strength)
    2 teaspoons chili powder
    1/2 teaspoon ground cumin

    What To Do:

    Preheat oven to 350°F.

In a small bowl, mix the shredded cheeses together.

In a large bowl, combine the sour cream, cream cheese, refried beans, picante sauce, chili powder, and cumin Mix thoroughly by hand or electric mixer (Or put all ingredients, except shredded cheeses, in a food processor and blend.)

Spread half the bean mixture in an 8-inch square baking dish coated with nonstick vegetable spray. Cover with half the shredded cheese. Add remaining bean mixture; top with remaining cheese.

Bake for 20 minutes or until heated through. Makes 6 to 10 servings as a dip
(depends on how hungry your eaters are!)

    Notes

If you prefer, you can use a little less cumin and chili powder. Sometimes I serve chopped tomatoes and guacamole on the side, and I always serve this dish with tortilla chips.

For those that have made the the cream cheese squares…what is best way to eat them: warm, room temperature or cold. I made them for teachers at school and kept a couple for myself. I had one cold today with a cup of coffee and it was excellent, but wonder if it would be even better warm!

    • Whitney

I love them warm! Not hot…just warmed a bit! I top mine with cinnamon sugar, also. Soooo good. But sooo unhealthy. I don’t eat these often- but I enjoy them when I do 😉

Pillsbury now makes the Crescent Recipe Creations, which is a seamless dough sheet. Perfect for this recipe, and others! Same price as the regular Crescent rolls.

I printed a bunch of the 50 cents off 1 they had last month. Last week weis had them b1g1 for $2.59. So I got 2 pkgs of cream cheese for 59 cents! Talk about a score. 😀

Can we bake a head for a party or do we have to bake it at a moment. And for long we can keep it. TIA
