3 Ingredient Tagalong Cookies

Ingredients

  • 12 Vanilla Wafer Cookies
  • 3 Tablespoons or so of creamy peanut butter
  • 1/2 cup chocolate chips
  • Optional: 1/4 teaspoon coconut oil

Directions

Spread peanut butter on top of wafers and place on a cookie sheet lined with parchment paper.

Microwave chocolate chips for 15 seconds at a time stopping to stir until melted (I like to add a small amount of coconut oil to chocolate chips to make the melted chocolate more smooth).

Dip peanut butter topped wafers into chocolate until covered and place on parchment paper. Refrigerate until set. Enjoy!

Copycat recipe for Girl Scout Tagalong Cookies, you are gonna love this super easy dessert recipe!

Ingredients

  • 12 Vanilla Wafer Cookies

    Karen, I do ” Trim Healthy Mama” ( lost 20 lb) and eat healthy treats all the time. I am wondering if there is a way to substitute something for the vanilla wafers. Coconut Oil is part of the plan, and a little peanut butter is as well!

    What’s the easiest way to do the pb-covered cookies into chocolate?

      I’m going to try dipping one half, do all that way, chill a bit to harden the first half, then dip the other half.

      I just used my hands and it did get messy, but i do like the idea of doing one side at a time. 🙂

    I make a christmas cookie that is dipped in chocolate. I use parafin wax in the choc chips to make smooth and shiny. I melt it all together in a double boiler on the stove and dip away.

With proceeds from cookie sales, I’ve taken girls to camp, Washington, DC, local museums, plays and presidential libraries, as well as used money earned to fund community service projects led by the girls.       I normally purchase for myself, for valentine’s and for troops. I was very disappointed last year not only at the price increase that continues but to discover that very little goes to the girls and also the fact they could barely hold a conversation. Moms and grandmas sold me the cookies.

        In my area of the country, there hasn’t been a price increase in several years, but all regions are different. Little Brownie Bakers has to be paid for the ingredients and labor for producing the cookies, then Girl Scouts of USA receives a portion for the upkeep of camps, facilities, and programs. Then, troops receive their funds….in my regions it’s anywhere from .50 to .75 per box. The more a troop sells, the more they earn. Younger girls do need more assistance from adults when selling, but as they become older and progress through scouts, their marketing skills and confidence improve. Last year, my first troop that began when they were in kindergarten bridged out to adults as they graduated high school. They learned so many wonderful things those 13 years together and have a lifelong bond. We all got together when they came home from college for Christmas, and it is such a blessing to see the fine young women they are becoming. My second troop are high school freshman who have been together since first grade. I’ve been a part of selling thousands of cookies through the years and have seen firsthand “what a cookie can do!”

        The price increase does suck. I wouldn’t hold the girls to high standards for sales skill though. I remember I was super uncomfortable my first year. The next year I did better with the troop around but still got nervous during solo sales. It takes time for some of them to gain confidence especially when asking for money from complete strangers 😉

    Maybe I can make these on my next carb day. Might substitute with dark chocolate just to make it a tad better. I’ll have to try the thin mint recipe for the hubby to make up for his disgust of my peanut butter love affair. Thanks for the awesome ideas.
