Homemade Vanilla Almond Granola

Ingredients

  • 3 cups Rolled Oats
  • 1/2 teaspoon Cinnamon
  • 2 Tablespoons Brown Sugar
  • 1 teaspoon Vanilla Extract
  • 1/4 teaspoon Salt
  • 1/3 cup Honey
  • 1/4 cup Coconut Oil
  • 1/2 cup sliced Almonds

Directions

Preheat the oven to 325 degrees.

Mix oats, brown sugar, cinnamon and salt in a bowl and set aside.

In a separate bowl, mix coconut oil, honey, and vanilla.

Pour the liquid mixture over the oats mixture and mix until evenly coated. In a thin and even layer, spread out over a Silpat Non-Stick Baking Mat or a cookie sheet covered in parchment paper.

You may need to separate into two baking sheets to ensure oats toast evenly and get that crunchy texture.

Bake at 325 degrees for about 15-18 minutes or until golden brown.

Take out of oven, toss with nuts and/or dried fruit, and let cool. Texture will become crunchy as it cools. Store in airtight container.

Homemade vanilla almond granola recipe

Making homemade granola can cut down on your grocery bill and also happens to be super easy! Plus, I love that you can control the amount of sugar added and can customize to your liking by adding in your favorite nuts, seeds and dried fruits. In addition to making a great cereal, granola can be added to yogurt and fresh fruit for a breakfast parfait and makes a great snack all on its own!

    Thanks. My family and I are in to CLEAN eating and have been wondering how to do this without sugar or much sweeteners.     As soon as I saw this, I got up and made it! It took no time at all and was so delicious! I didn’t have rolled oats so I used quick oats and it worked just fine. I also subbed unsweetened shredded coconut for the almonds because I didn’t have any. I can see adding cocoa powder and making chocolate granola! Thanks so much for this quick and adaptable recipe! I will never need to buy cereal again!
