Craving a sweet fall treat? Pumpkin Spice Mug Cake is the perfect single-serve dessert!

Easy peasy treat!

This recipe uses oh so simple, inexpensive ingredients, and it cooks up fast in the microwave. It’s perfect for those moments when you’re craving all the fall flavors of pumpkin-infused baked goods, but don’t want to deal with a full-blown baking adventure and all of the associated clean-up. I like to sometimes make one of these after the kiddos have gone to bed as a late-night snack just for me. 😋

All you need is some spiced cake mix, pumpkin puree, vegetable oil, and milk. We added a dash of pumpkin pie spice to ours as well — it’s optional, but just adds an extra boost of warmth and coziness to the cake! 🎃 Feel free to throw in some chocolate chips to kick the flavor up a notch.

This pumpkin spice mug cake is an absolute winner!

I’ve tried a lot of mug cake recipes, and the truth is, they don’t all turn out this well. This mug cake is so easy to throw together, and the texture comes out perfectly moist and cakey in under two minutes.

Best of all, it tastes great and will quickly satisfy your cravings for all things pumpkin spice during this time of year.

It’s the perfect dessert for celebrating a rare moment to yourself, so top it off with some whipped cream for the perfect ending to a busy day. 😊

Is there a low carb version?

    • Lina D (Hip2Save Sidekick)

hmm we have quite a few pumpkin recipes on our low carb keto site, but not a mug cake. That is a great idea though!
Here are some muffins that could be similar –> https://hip2keto.com/recipes/keto-pumpkin-muffins/

Hey Lina, If a person wanted to make this into a whole cake in the oven what do you think the ratios would be? One box cake mix and…..do you think if I just followed the quantities on the box say maybe less oil and add a can of pumpkin plus spices?

I loved it! Made it for breakfast.
