Fat Head Pizza Crust Recipe (Finally a Low Carb Pizza I LOVE!)

Fat Head Low-Carb Pizza Crust

yield: 8 SERVINGS

prep time: 15 MINUTES

cook time: 15 MINUTES

total time: 30 MINUTES

Ingredients

  • 3/4 cup almond meal/flour
  • 1 and 3/4 cups mozzarella cheese, shredded
  • 2 tablespoons cream cheese
  • 1 egg
  • pinch of salt
  • 1/2 teaspoon Italian seasoning
  • Desired pizza toppings (tomato paste or sauce, mozzarella cheese, pepperoni, mushrooms, bell peppers, etc.)

Directions

Preheat your oven to 425 degrees. Combine almond flour and mozzarella cheese in a microwave safe bowl. Add in cream cheese and cook for one minute.  Stir, and cook for an additional 30 seconds in the microwave.

Mix in egg, salt, and Italian seasoning, and stir.

Shape the dough into a ball and place between two pieces of parchment paper.

Use a rolling pin on top of the parchment paper to roll dough in a circular shape. (Mine was more of an oval.)

Remove the top parchment paper and slide dough onto a baking sheet or pizza stone. Bake at 425 degrees in the oven for 12-14 minutes until slightly browned.

Add any desired pizza toppings and sauce you’d like to the top of the crust. (Keep in mind, if using raw meat you’d want to cook it first before putting on pizza.) Continue cooking in oven for 5 minutes until cheese melts.

Love pizza, but not the carbs?!🍕

You’ve gotta try making Fat Head pizza dough out of cheese and almond flour! It tastes great, is keto-friendly, low carb, gluten-free, and happens to be super simple method using just a few main ingredients. Plus, I like that the texture is chewy like normal pizza dough, and sturdy enough to pick up a piece to eat!

Fat Head Pizza is a very popular low-carb recipe idea online and also happens to be a favorite among several of my fellow Hip2save sidekicks, so I was excited to try it out!

This Fat Head pizza crust recipe is finally a low carb pizza I love! You're going to love it, too!

Things to Consider:

  • I diced bell peppers and mushrooms and sauteed them first on the stove before topping my pizza, but that’s just personal preference.
  • I’ve read that you can substitute 1/4 cup of coconut flour instead of almond flour, but haven’t tried it yet.
  • Next time I may try flipping the Fat Head pizza crust over halfway through baking for a more evenly cooked crust.
  • You can divide pastry and make smaller personalized pizzas!
  • This pastry would make delicious “garlic bread” and a bread substitute for various other recipes!

No joke ~ this pizza is YUMMY! We liked the taste and texture better than cauliflower pizza!

    I made this tonight and was BLOWN away that I was actually eating PIZZA. It tastes amazing and was WAY more simple than I thought it would be. Great recipe! With the brands I have for the ingredients, I got 4.2 net carbs for a total of 8 slices.

    The pizza tasted so good! It tasted like a regular pizza. My sisters aren’t keto and they bought pizza from pizza time and I’m keto so I couldn’t have it so I looked up a keto friendly low-carb resolution and found this and made it and it was just like having regular pizza ecept guilt free and even more delicious and it only took about fifteen minutes.

    Thought this would be a poor substitute, boy was I pleasantly surprised. I put green pepper, onion, pepperoni, bacon, sauce, and more cheese. Divided the dough in half but was still filling enough that I shared with my husband. He declared it delicious. I’ll admit I’m a lot more picky than he is, but I really liked it too. I’m going to use the other half of dough to make a “bun” for my Saturday night hamburger. Thanks for the wonderful recipe.

    I was SO excited to make this!!!! But my dough was so wet…had to add extra flower…ugh…followed the recipe exactly…Anyone else has this issue????

      After adding in the egg, yes. I ended up taking it out and kneading it with my hands. This takes a minute but it will start to feel like a sticky dough. I’m trying it now as I’m typing (its in the oven) I’m still pretty skeptical on how its going to turn out. Wish me luck!

      Golden flaxseed meal can work, you just have to play with the amount. Start with a little less, half a cup. You can also skip the egg. KetoDietApp.com has a similar dough used to make hot pockets with flaxseed meal that works well. HTH.

    I am having so much trouble with this recipe. It’s just way too sticky to roll out… i followed the recipe exactly. Not sure what im doing wrong. I’ve even added some coconut flour to get it to dry up but when i put it in the parchment paper it just sticks to both sides and splits. When i try rolling it, it sticks to the roller…

      Ya it can be sticky – you have to keep stirring and sometimes putting it in the fridge can help dry it out.

      I just put everything into my food processor…..don’t microwave…..add a little more almond flour if too sticky….and flour on parchment paper to roll it out!! Perfect every time!

    Amazingly delicious. I had been craving my Midwest favorite, Godfather’s Pizza, and wanted to make deep dish. I put the rolled out crust in a cast iron skillet, with the crust going up the sides, and baked till brown. Then filled with layers of mozzarella, fried Italian sausage, low-carb pizza sauce, sautéed mushroom, sliced black olives, a little more mozzarella and Parmesan, sprinkled with red chili flakes and oregano, and baked till bubbly. 20-30 minutes. Unbelievably good. My skinny carb-eating friends were fighting me for it. You don’t miss the crust AT ALL. Now make 2-3x a month.

    Hi I read all the comments.. but nobody mentioned about putting tomatoe sauce … I am not a keto person, just looking for low carb. Anyways not sure if I can add the sauce or not… and if yes… when? Before baking or after the firts 10_12 minutes. Thanks! Great post

      hi! Yes you will bake your crust first. Then put sauce and toppings and bake again just to melt. Hope that helps 🙂 Try to pick a lower in carb sauce.

      Hi! I use Walmart’s great value brand pizza sauce. It is cheap, tastes great and its the lowest in carbs and sugar that I have found.

    Just made this pizza for my very skeptical Italian family of pizza connoissuers ! They LOVED it!!! When I made the second pizza, I actually forgot to add the egg. I dont think it affects the taste, just the texture of the dough. It’s more like melted cheese w/o it. Thank you SO much for sharing this with us. Now i can make pizza crust on the fly w/o having to wait for bread dough to rise.

    Tried it and I AM IN LOVE!!! Thank you for this recipe! It’s true that it can be very sticky but just keep mixing and kneading and it turns out perfect every time. This has become a staple in our home. I use this recipe to make personal size pizzas and pigs in a blanket but I dial down the Italian seasoning for the pigs. So yummy!!

    This is my second time to make a keto pizza. I liked this recipe better than the other. Putting the almond flour in the same bowl with the both mozzarella cheese and cream cheese to melt made it so much easier to mix. Than I added egg and mixed with my hand and was less sticky than the other.
    Only thing I would suggest is poking holes with a fork in it before the oven. It will bubble.

    We are having a birthday party in two days and we are planning on making the fat head crust cook it and storing for Sunday and topping and finishing cooking! Has anyone ever stored it cooked for another day? And if so how did you store it?

    I don’t get the praise for this recipe. It stuck horribly and I wish someone had said how thin or thick to roll it.
    I had to cut it into 4 pieces just to flip it because it was tearing apart. It never seemed “done” and just broke apart when I tried to pick it up. I followed the recipe exactly. What a waste of food.

      Oh no! So sorry it was disappointing…Did you use parchment paper? It’s definitely a must for this popular idea. As far as how thin to roll it, that’s personal preference. Some like thin and crispy. Sounds like maybe it was rolled too thin? Again I’m sorry it didn’t turn out as hoped.

    crusts and they CRUMBLED! I also tried two recipes that called for almond flour, but this is THE BEST !!! My husband who is NOT on Keto ate several pieces and remarked how good it was .
