Ingredients

  • 1 cup peanut butter
  • 1 egg
  • 1/2 cup erythritol natural sweetener

Directions

Combine all three ingredients in a mixing bowl.

Roll out 15 one-inch sized cookies onto a parchment paper covered baking sheet or silicone mat.

Use a fork to press down on the tops of cookies.

Bake at 350 degrees for about 10-13 minutes.

Let cool and serve. Store leftovers in a covered container.

You’ve gotta try these DELICIOUS Peanut Butter Cookies using just three simple ingredients. They puff up a little bit, have great flavor, and kind of melt in your mouth. In fact, you’d never guess they’re low carb at all!

A few years ago we shared a very easy 3 Ingredient Gluten Free Peanut Butter Cookie recipe that fellow Hip2Save readers really enjoyed. The recipe I’m sharing today is basically a low carb variation to that popular idea!

3 ingredient easy keto cookies

If you’re following a Low Carb or Keto lifestyle make sure to pick a natural peanut butter that has no sugar or low sugar. You’ll also need a sugar substitute such as erythritol.

      Yes an artificial sweetener would work – however if someone is following a strict Keto diet a natural sweetener like Erythritol or Stevia is better. Essentially use the sweetener that works best for you – hope that helps. 😀

      I’m all for keto, think it makes perfect sense, but I’m one of the few that only had 5 pounds to lose and I actually gained 3. Not uncommon from everything I read, so I just need to keep up with it!!!

        Keto is not magic. Unlike what a lot of people will tell you, you cannnot jsut eat all you want and still lose weight. Its still basically calories in and calories out. Make sure you are taking in less fat and calories than you are burning in a day and you should start burning those 5# off. Just remember, keto is burning fat for energy. That fat can come from your bodyfat or your dinner plate. So if you are eating fat bombs, coconut oil by the spoon full and all the butter you can eat, you will be burning dietary fat and never start buring your bodyfat.

    I have a great recipe for “pancakes”
    2 eggs
    1 over ripe mashed banana
    Cinnamon
    Vanilla

    Cook like you would cook pancakes. I use whole butter. It is actually really good for digestion in moderation.

    Top with almond butter.

    If you omit the almond butter you can add 1 scoop chocolate protein powder for extra protein and a chocolate banana flavor.

      My brother made me these Aleshia and they are delish! He made his in a non-stick pan. Is that what you use?

        Yes, I used a non stick pan, but like I said I also rubbed the pan with butter. I uses to shy away from all things fat, but it is actually good for us in certain forms and in moderation. I didn’t use much at all though.

        I know that it isn’t keto, but still very healthy and bananas are a great source of potassium.

          You can use banana extract to make it keto. There are recipes for keto banana bread too.

    Just a note for anyone following keto, that peanuts (and therefore peanut butter) are legumes and not nuts which means they can cause inflammation and not a part of a strict keto way of eating. Other nut butters could be substituted though.

      Keto is simply starving your body of carbs, so it is forced to burn fat (as ketones) for energy. Cutting carbs from your diet. It does not have to be high fat diet. Simply ultra low carb

    If you are strictly following keto, peanut butter might actually kick you out of ketosis. Peanut is not a nut, its legume, and legume is not keto approve. If not, this is a great low carb dessert/snack and I love this one! Super easy with only 3 ingredients 😋😋😋

    I occasionally make these with almond butter. Peanuts kick me out of ketosis but almonds in moderation don’t. It’s a delicious and super easy recipe. Sometimes I add a slivered almond or a few Lilly’s chocolate chips on top and once I added maple extract and cinnamon to the batter. It’s such an amazing and versatile recipe.

    im making these now to try out before sharing them at work.. i had a problem with them sticking to the fork.. maybe it was the almond butter i used instead of peanut butter.. the dough tasted good on my fingers.. i cant wait to have a completed cookie 🙂

      I had the same issue when I made these. Literally needed a glass of water nearby, so I didn’t choke on them. I can’t figure out how it went wrong as I followed the directions to a tee.
