Low Carb & Keto Broccoli Cheddar Soup

Then you NEED to try this delicious creamy Broccoli Cheddar Soup! It’s such a comforting low carb meal to help keep warm this winter, and happens to be very EASY to make.

I like that there are just a few simple ingredients needed for this recipe, and you can keep it meatless, or add in bacon, ham, or shredded chicken at the end. SO good.

Keto Broccoli Cheddar Soup

You'll be enjoying a comforting bowl of Cheddar Broccoli Soup in no time with this EASY to make Keto recipe.

Serves: 3

Cook Time: 20 minutes



  • 1/4 cup diced onion
  • 1/4 cup diced celery
  • 2 tablespoons butter
  • 1 and 1/2 cup broccoli, cut into small pieces
  • 2 cups chicken broth
  • 1/4 cup heavy whipping cream
  • 1 cup cheddar cheese, shredded
  • 1/2 teaspoon Xantham Gum
  • salt & pepper to taste
  • a few slices of bacon or ham if desired


  • Step 1:

    In a large saucepan on the stove, saute onion and celery with butter until translucent. Season with salt & pepper.

  • Step 2:

    Add chopped broccoli and saute for a couple of minutes.

  • Step 3:

    Pour in chicken broth, and cook until broccoli is tender.

  • Step 4:

    Turn off heat and stir in whipping cream.

  • Step 5:

    Stir in cheese to melt.

  • Step 6:

    Whisk in Xanthan gum to thicken soup.

  • Step 7:

    Serve with a few slices of cooked bacon or ham if desired. YUM!

Additional Notes

Recipe adapted from 

  • This recipe makes enough soup for about three bowls, so if you were feeding a large family I’d consider doubling it.

  • Xantham gum is a great way to thicken low carb soups and sauces. You could skip it, but a very small amount makes the broth super rich, creamy and gives it a thicker texture.

I made this Keto Broccoli Cheddar soup for a quick lunch recently and it has great flavor and texture. In fact, it was gone in just a few minutes, so next time I’m making a larger batch for leftovers.
