Preheat oven to 350 degrees. Spray 9x13 casserole dish with non-stick spray.

Cook ground beef in a skillet on the stove and season with homemade taco seasoning or packet. Mix in Rotel and enchilada sauce with the meat.

Spoon 1/3 of the meat mixture on the bottom of casserole dish. Layer 6 tortillas over the top of meat.

Spoon another 1/3 of the meat over the tortillas, along with 1/2 can of corn, 1/2 can of beans, and half of the shredded cheese.

Repeat with 6 other tortillas, remaining meat, corn, beans, and top with cheese.

Bake covered with foil for about 25 minutes. Remove foil for the last 5 minutes.

Serve warm. Top with chopped green onion and olives if desired.

Try dishing up this tasty version featuring layers of corn tortillas, black beans, and cheese that’s bursting with Mexican inspired flavors! It uses easy to find ingredients and not too much effort in the kitchen, which is a definite win!

Such an easy dinner idea all will LOVE!

You can definitely add and subtract ingredients to fit your family’s taste. I used some pepper jack cheese for spice, but feel free to replace with all Mexican blend or cheddar cheese. You can also sub in a different variety of beans when you’re ready to mix up the corn and black bean mixture.

    We make this in a round pie dish and I call it Taco Lasagna! One of my favorites especially because it holds up so well and the leftovers are delicious! It’s a great addition to a meal rotation and you can premake then throw in the oven when you’re ready! I use this for meal trains often with rave reviews and recipe requests.
