- Two – 14.5 oz cans diced tomatoes (try the fire roasted variety)
- 1/2 bunch of cilantro
- 1/2 white onion
- 3 green onions
- 2 jalapeños, seeded (more or less depending on the heat you prefer)
- 3 cloves garlic
- 1 tablespoon lime juice
- 2 teaspoons ground cumin
- 1/2 teaspoon salt (or to taste)
In a high powered blender or food processor, add cilantro, jalapeno, onions, garlic, and lime juice. Pulse until chopped finely (if you like salsa a little chunky, just process a few seconds!).
Add tomatoes and pulse a few times to combine.
Stir in cumin & salt to taste and serve with tortilla chips.
Makes about 5 cups of salsa. Store leftovers covered in the refrigerator.
