Do you love lasagna?
I’ve found an easy and delicious way to get all the yummy flavors of homemade lasagna in a warm and easy to make soup! You’ll have a warm and hearty meal on the table in no time that’s super comforting on chilly nights.

8 ounces lasagna noodles, broken into pieces (about 10 noodles)
1 tablespoon extra-virgin olive oil
1 onion, chopped
1 lb. ground Italian sausage
3 cloves garlic, chopped
1 teaspoon dried oregano
2 tablespoons tomato paste
4 cups low-sodium chicken broth
1 Cup Water
1 -15 -ounce can crushed tomatoes
1/2 cup chopped fresh basil
1/3 cup grated Parmesan cheese
1 cup Ricotta Cheese
Break and cook noodles according to package directions, drain, and set aside.
In a large pot or Dutch oven, heat up olive oil on medium and sauté onion and garlic for a few minutes.
Add in meat with oregano and brown until cooked.
Stir in tomato paste and let cook for a couple minutes.
Add the chicken broth, tomatoes and 1 cup water.
Bring soup up to a simmer and let it slightly reduce for about 10 minutes.
Stir in the noodles, basil, Parmesan cheese, and 1/2 cup of the Ricotta cheese.
Pour soup into bowls and top with a spoonful of ricotta cheese and additional chopped basil if desired. Serves 4-6.
Time Saving Tip: Keep a tube of tomato paste handy in the fridge to use for recipes like this one instead of opening a can.
So this is the best soup recipe I’ve tried in a long time! SO good.
You could definitely alter the recipe to suit your family’s taste and use another pasta if desired. It’s super flavorful and delicious. The broth is AMAZING. Even people like my hubby who don’t usually love soups as a meal really enjoyed it! The leftovers are yummy too. Enjoy!
