3 Ingredient Slow Cooker BBQ Chicken

3 INGREDIENT SLOW COOKER BBQ CHICKEN

Ingredients

  • 4 chicken breasts
  • 1/2 bottle or can of root beer (full sugar not diet) โ€“ you can use Coke or Dr. Pepper if you prefer
  • 18 oz. bottle of BBQ sauce, I used Stubbs
  • 1/4 Tsp Salt
  • 1/4 Tsp Pepper

Directions

Place chicken breasts and root beer in a slow cooker and cook for about 3 hours on high. Shred and drain most of the liquid.

Leave a little so chicken doesn't get dry. Add salt & pepper.

Pour in a bottle of BBQ sauce and let cook another 15-20 minutes in slow cooker.

Serve on rolls. I sometimes add avocado or even saute onion to serve on the sandwich.

    No one in my family will eat this but me. I would load up a bun with coleslaw and pile it with chicken and pickles.

    We do coleslaw on bbq pork.. So prob just as good on chicken.

    I do this with pulled pork. Will have to try the chicken some time! PS The pulled pork version freezes very well. (I imagine this would too).

      Yes pulled pork freezes very well. I usually make two small pork roasts in my large crockpot. Eat what we want for one meal and portion everything thats left into freezer bags and have some easy meals for later on!

    You honestly don’t need the rootbeer! I just so BBQ sauce and chicken… Less calories! And totally yummy! You c an even freeze it ahead of time. I’ve done this for new moms to be! ๐Ÿ™‚

      I think the soda acts as a tenderizer so it doesn’t dry the meat out (breast meat especially) in the crockpot. I have a crockpot rib recipe that calls for 1/2 c soda and I can taste the difference in the meat when I skip the soda!

    I make this frequently & it’s a hit with even the picky kid! I add a thinly sliced onion to the bottom of the crockpot, put the pork on top, pour over the root beer and about a tablespoon of apple cider vinegar (this tenderizes the meat even more!). After cooking, strain the liquid out and keep the onions to add back after pulling the pork. Even my MIL asked me for the recipe!
