BBQ Chicken Salad with Cilantro Ranch Dressing

Ingredients

For the Salad:

  • 2 large chicken breasts
  • 4 tablespoons Kraft Original BBQ Sauce
  • 2 ears fresh corn on the cob
  • 4 cups red leaf or romaine lettuce, chopped
  • 1/2 cup red onion, chopped
  • 1/2 cup radishes, sliced
  • 1 cup black beans cooked and drained
  • 1 cup tomato, chopped
  • 1 large avocado, sliced
  • 1/2 cup tortilla strips

For Dressing::

  • 1 cup Kraft Ranch Dressing
  • 1 cup fresh cilantro
  • juice from one lime

Directions

Soak corn for 30 minutes in cool water. Grill corn and chicken until cooked through. (I like to grill corn with husk on and then it easily peels off when cooked.) Top chicken with BBQ sauce. Butter and salt corn if desired. Cut the corn kernels off the cob and set aside.

For dressing: Combine ranch, cilantro, and lime juice in a food processor or high powered blender until the cilantro leaves are completely pureed.

Layer and divide the lettuce, corn, chicken, onion, tomatoes, radishes, beans, avocado, and tortilla strips among four plates. Drizzle with cilantro dressing and additional BBQ sauce.

    when i print them they are all very tiny. cant read the words on them and the barcodes are very small, so is the whole coupon. help…..

      Are you printing them all on one page? Try changing your print settings to print them over 2 or 3 pages and see if that bumps up the scale enough to be legible.

    They say they’re manufacturer’s coupons and while they say “redeemable at Albertsons” they don’t include the word “only”. I don’t have an Albertsons anywhere near me but I think my grocery store should accept them.

      Nevermind, I see where it shows the state restrictions on the side.
