Try to eat just one of these brownies.

These Almond Joy Coconut Brownies might look like a million bucks and taste like they were just bought from a fancy bakery, but the truth is that the main ingredient is actually just boxed brownie mix.

I am a sucker for boxed mixes, and often use them as a base to create yummy and simple recipes. You can do so much when using a boxed brownie mix, plus I love that I usually end up saving both money and time.

HIP TIPS

  • Add a layer of parchment paper to pan before pouring the brownie mix to prevent sticking, and help with easy clean up.
  • Don’t forget to garnish your brownie mix before baking in the oven. The toasted coconut adds another layer of amazingness to this easy dessert.

There’s a much simpler recipe: Use whatever brownie mix you like. Purchase Almond Joy snack size bars. Grease 9×13 pan and place opened snack size bars on the bottom of pan. Pour your brownie mix over top and bake. It’s delish!!

    • Alicia Holman

      Do you grease your pan?

  2. Maria

Great idea – after Halloween, they’ll be half price too!!

  3. Kryslys

What is y’alls favorite boxed brownie mix? I love a good fudgy brownie. TIA!

    • jeanette

I love the ghirardelli one, so delicious.

      • Kryslys

        Thank you!

        • Kayla

I agree, I’ve tried them all and agree with Jeanette, Ghirardelli is the beat.

          • Ana

            Agree

I like Duncan Hines Milk Chocolates Brownies.
I usually put a layer of mix, a layer of Chocolate bars and another layer of the brownie mix.
I’ll also put some chocolate chips on top if I have them.

    • Kryslys

That sounds like a delicious chocolate overload!

  5. Angela V.

Sounds yummy, thanks for sharing! I can’t wait to try. πŸ™‚

I’ve made these several times over the years and they are delicious. The only things I don’t like about them is the dark chocolate & almonds, (I’m not suppose to have nuts anyway due to gastroparesis), so YES, I’m one of those people who likes milk chocolate and throws the almonds away! So when I make these I omit the almonds and name them “MOUNDS JOY”! πŸ˜‰

    • Kelly Hutson

Love that idea! I don’t like almonds but love milk chocolate and coconut! Thank you.

Any ideas of what could be used in place of coconut… the family is not a big fan πŸ€·πŸ»β€β™€οΈ

Cauliflower! Why not people use it for everything and say it that the same as the original recipes! 🀣🀣🀣

      • P.L. Prosen

I think that sounds like creativity to me! You could grate it so it’s the right consistency. Bet it works great-good idea!

    • Amber (Hip Sidekick)

Hmm, You could add your favorite candy, but then don’t do the cream center as that is the almond joy flavor. Hope that might help!

  8. LISA A

I made this recipe and the batter never cooked thru in the middle. I cooked it for 50 mins and the inside was runny. I don’t know what happened

    • Amber (Hip Sidekick)

So sorry about that. Maybe bake just a bit longer if you decide to try once more. Hoping that might help.
