BBQ Chicken Salad with Cilantro Ranch Dressing

For Salad:

2 large chicken breasts
4 tablespoons Kraft Original BBQ Sauce
2 ears fresh corn on the cob
4 cups red leaf or romaine lettuce, chopped
1/2 cup red onion, chopped
1/2 cup radishes, sliced
1 cup black beans cooked and drained
1 cup tomato, chopped
1 large avocado, sliced
1/2 cup tortilla strips

For Dressing:

1 cup Kraft Ranch Dressing
1 cup fresh cilantro
juice from one lime

How to make grilled chicken salad

Directions:

Soak corn for 30 minutes in cool water. Grill corn and chicken until cooked through. (I like to grill corn with husk on and then it easily peels off when cooked.) Top chicken with BBQ sauce. Butter and salt corn if desired. Cut the corn kernels off the cob and set aside.

For dressing: Combine ranch, cilantro, and lime juice in a food processor or high powered blender until the cilantro leaves are completely pureed.

Layer and divide the lettuce, corn, chicken, onion, tomatoes, radishes, beans, avocado, and tortilla strips among four plates. Drizzle with cilantro dressing and additional BBQ sauce.

    Is this sponsored by kraft?

    • mel

I’m sure you can use any brand ranch dressing. I don’t care for kraft myself.

    • Rebecca

Ha I was wondering the SAME thing! Seems odd.

      • Mourrene

It could just be what she had on hand. Those are the products I would have had handy.

        • JS

I agree with you! I would have the same products probably great coupon scores 😉 nonetheless it looks yummy!

    • Jesse

That was the FIRST thing I thought when I saw this! Followed by “ewww, GMO dressing/sauce, ick!” Of course homemade or organic ready made will do just fine.

    • Lina (Hip's Modern Martha)

Of course use any brand you prefer! We originally posted this recipe with some Kraft coupons last month, but decided to repost on it’s own today. Thanks!

I really like the idea that you are trying to make a copy cat recipes of some restaurants dishes which make us have a healthier and less expensive alternative.

So I was just wondering if you know any copy cat recipe of the Thai yellow curry sauce. I use it a lot and my whole family love it so I was looking for a healthy copy cat substitute. Thanks in advance

    • Tammy

Jude that sounds delicious! And so does this post!

  8. Cristine

I am looking for a good copycat version of Applebee’s oriental salad. Can’t seem to get the dressing quite right. You know- in case you are looking to make that in the next few weeks 😉

  9. Sarah

Can you use frozen cilantro for this? I never use an entire bunch when I purchase it and hate throwing it away. Always looking for ways to it can be used after freezing.

    • Lina (Hip's Modern Martha)

      Sure! Good idea 🙂
