BBQ Chicken Salad with Cilantro Ranch Dressing
For Salad:
2 large chicken breasts
4 tablespoons Kraft Original BBQ Sauce
2 ears fresh corn on the cob
4 cups red leaf or romaine lettuce, chopped
1/2 cup red onion, chopped
1/2 cup radishes, sliced
1 cup black beans cooked and drained
1 cup tomato, chopped
1 large avocado, sliced
1/2 cup tortilla strips
For Dressing:
1 cup Kraft Ranch Dressing
1 cup fresh cilantro
juice from one lime
Directions:
Soak corn for 30 minutes in cool water. Grill corn and chicken until cooked through. (I like to grill corn with husk on and then it easily peels off when cooked.) Top chicken with BBQ sauce. Butter and salt corn if desired. Cut the corn kernels off the cob and set aside.
For dressing: Combine ranch, cilantro, and lime juice in a food processor or high powered blender until the cilantro leaves are completely pureed.
Layer and divide the lettuce, corn, chicken, onion, tomatoes, radishes, beans, avocado, and tortilla strips among four plates. Drizzle with cilantro dressing and additional BBQ sauce.

That was the FIRST thing I thought when I saw this! Followed by “ewww, GMO dressing/sauce, ick!” Of course homemade or organic ready made will do just fine.

Can you use frozen cilantro for this? I never use an entire bunch when I purchase it and hate throwing it away. Always looking for ways to it can be used after freezing.
