Even an easier one. When I get the rotisserie chicken from Costco, I usually save a 1/4 of it. Put that in a pot, add some water, dice up a bunch of carrots and celery. Let it cook on medium for 20-30mins or until veggies are soft, it’s delicious.

      YUM! That sounds so good.

    • Maria

That’s always my last meal of a rotisserie chicken 🙂 SOUP ! I boil the whole thing bones and all. For the broth.

  2. Jennifer

Gosh, I want to try them all! Yum!

Yum! It’s 100 degrees here in SoCal today so these will have to wait.

    • yipee

Right?!? I’m in OC and my car says 105° right now. We’ll just have to wait until Nov to make this when it’s 70°ish! 🙂

These soups look so good!! What are the best low cal soups that don’t use any alcohol or bacon?

    • Julie

Check out the skinnytaste blog. Been following her for years. She has a ton of soups that is a fraction of the calories. I’ve tried several and don’t notice the difference in taste.

      • Amalia

Thanks for mentioning the skinnytaste blog. I just checked it out and it looks perfect for our healthy conscience family! (Although all of Collin’s soups look fantastic too!)

We jus made chicken and dumplings tonight! We love that it is cooling off. We take three to four cans of chicken, box of chicken broth, large can of cream of chicken soup and heat to high and then take three cans of refrigerator biscuits and tear them apart to dime size pieces and drop into pot and heat on medium for ten minutes and dinner is done. Salt and pepper to taste. We have even used left over chicken or store bought rotisserie chickens. Easy peasy.

    • Collin (Mrs. Hip)

      Sounds yummy! Thanks for sharing!

    • Karen

Wow, how delicious and easy. Thanks!

Thanks for these yummy soup recipes. 56 and very windy in Michigan so it’s time for simmering soups and fresh baked breads. And of course my fall scented Yankee candles make my whole house smell wonderful.

    • Collin (Mrs. Hip)

      You’re welcome Karen! Enjoy!

  13. Emily

Thank you! It’s about 100 degrees here today but I still decided to try out the panara broccoli cheese soup – so good!!!! Even my picky 3 yr old ate some! I made it gluten free by subbing in gf flour and used frozen broccoli because I had it on hand. Also onion powder instead of onions. Definitely a hit at my house! Thanks again!

    • Collin (Mrs. Hip)

      Awesome! You’re welcome Emily!
