Easy Skillet Nachos (Grilling and Camping Idea)

Skillet Nachos

Ingredients

For the Nachos:

  • 12 oz bag of tortilla chips
  • 1 pound ground beef, taco-seasoned & cooked
  • 2 cups Mexican blend cheese, shredded
  • 15.5 oz. can pinto beans, drained
  • 15 oz. can Southwest flavored corn and peppers, drained
  • small can sliced olives
  • small can sliced jalapenos

Optional Toppings:

  • 3 green onions, sliced
  • 1/2 cup salsa

Directions

To the cast iron skillet, add a layer of chips, followed by half the ground beef, cheese, beans, corn, jalapenos, and olives. Repeat with a second layer of all those ingredients.

Cover skillet with foil, and place inside grill heated to a medium temperature or on top of campfire. Let cook for about 10-15 minutes, until cheese is fully melted. Remove foil, and enjoy warm.

These skillet nachos are a delicious and easy meal or appetizer to enjoy while camping or in the backyard using your BBQ grill. Who doesn’t love crispy nachos with layers of melted cheese and toppings?! The result is an irresistible skillet of zesty nachos that’s sure to be a hit with the entire family!

Keep these tips in mind when making campfire skillet nachos:

  • Customize this recipe easily. Any of the ingredients can be altered or omitted, and of course, this can be made without meat if desired.
  • Split ingredients into two layers so that you’ll have toppings on all the chips.
  • Place this skillet over the campfire or hot coals for about 15 minutes until cheese is melted, or in the BBQ grill on medium heat.

You can also easily serve nachos individually by placing them inside a foil packet. We’ve done this before, and each person can create their own combination and toppings to be melted on the campfire or on a grill. YUM!

    I do this a couple times a month in the oven it’s easy and quick dinner. I use ground turkey or left over chicken. I have even used left over turkey thighs/legs. I would love a plate for lunch now lol

    My BIL makes something similar. He uses Black Beans and instead of corn he uses a can of drained Rotel. Then hits it with a few squeezes of fresh lime juice once it’s heated through. Yummm. We’re not going camping til next month, but this has my mouth watering that I might make it Friday for dinner! Serve it with some diced avocado and sour cream.
