Ingredients

  • 2 cups shredded cheese (I used a Mexican Blend)

Directions

Line a large baking sheet with parchment paper. Pile 1/2 cup of shredded cheese into a 6 inch circle.

Bake at 400 degrees until cheese turns slightly brown, around 6-8 minutes (possibly more depending how big your pile is).

Build a little platform using large cups and lay spoons or chopsticks across the cups.

Use a spatula to transfer the cheese to lay across the suspended spoons. Let cool until firm.

Fill with taco meat and toppings! YUM!

Try this method of making taco shells using just shredded cheese! It works great, tastes AMAZING, and is very easy to accomplish. You will be hooked!

This idea is such a game changer if you’re trying to limit your carb intake! I think It’s more exciting than using a lettuce cup. Also, you could definitely make lots of meals into a taco – Sloppy Joe’s, shredded BBQ meat, tuna salad, avocado chicken salad, these would all make great fillings!

You can also try a different shredded cheese like Parmesan, if preferred. There are so many possibilities with this idea!

      Right!? 1/2 cup cheese is 200 – 250 calories right there. Sounds delicious. But, if you’re trying to lose weight you’re better off with the regular taco shell.

        I’ll have to agree with Heather. Low to no carbs but I don’t have to count calories. Just have to make sure I’m eating the proper fat/protein/carb ratios. It’s the way to go.

        Actually, the low carb diet disagree with the calorie counting. Cut carbs and you will lose weight. No rice, no wheat flour, no potatoes and no sugar.

      I kind of agree! Way too high in fat and cholesterol. Plus unless you plan on eating low carb your whole life it’s not helping with calorie and portion control. My arteries are hardening just thinking about it. Eh, what do I know, I just have my degree in dietetics.

        Funny……I ate exactly what the “dietician ” told me to eat and my cholesterol was sky high! Switched to Ketogenic and my numbers have ALL come down over the year!!

        Some people *have* to eat low carb for the rest of their lives. A diet that works for you may not work for someone else. I can’t have a lot of carbs or sugars as I’m insulin resistant. Trying to lose weight counting calories I was killing myself and gaining weight! Going low-carb/keto I’ve lost so quickly and feel amazing!!

    I just made some taco shells from provolone slices the other day and discovered that the edges of my loaf pan is the perfect platform to hang them from! It’s just deep enough and I don’t have to worry about it being unstable! 😊

    I’ve been on a low carb/keto diet for almost a year…what a game-changer! These also work out great making them in a non-stick skillet. I’ve made “pizza” crust by using shredded mozzarella & adding pepperoni. Also, using the same shredded mozzarella, add a little italian seasoning, form into a shell & use that to hold some low carb meatballs. Or you can use the cheddar shells & stuff them with scrambled eggs & bacon. Can you tell I love these things? I could go on forever 😉

      I manage to eat cheese at least once a day…moderation is key. I’ve hit my goal weight so I am into maintenance, a little higher calorie (around 1500-1600) but still under 25 carbs a day. I track my macros on myfitnesspal.

    I love the keto lifestyle! If you’re in a rush you can also pop them in the microwave. Or i also make “chips”. Parchment paper, teaspoon full piles of cheese and pop them in for a minute or so. Delish and crispy!

    I highly recommend looking into iifym or counting your macros. Carbs are not a bad things (if you’re getting them from the right sources and getting fiber along with them). I’ve struggled with my weight and eating disorders for most of mt life (I’m 25 now), but by counting macros and starting to lift my life changed completely. I’ve lot over 30 pounds (which makes a huge difference at 5’1″) and I’m currently in a lean bulk (eating extra calories to gain muscle).

    I just wanted to share this for those interested, in no way bashing any one elses lifestyle choices. This is a flexible “dieting” lifestyle. What we eat is comprised of carbs, fat and protein….they all do different important things for our body. Learning the science behind what we eat and what it provides for our bodies is very important in my opinion. I’m a congenital amputee and this has also given me so much confidence to go to the gym and lift, to find a way to make my body work for me.

    I use my silicone mat now instead of parchment. I love baked cheese! Tonight I snipped a stick of string cheese into little slices and made poppers. And the mat wipes right off with a sponge.
