No Carb Shredded Cheese Taco Shells
yield: 4 SERVINGS
If you're cutting the carbs, try these cheese shells for your next taco night!
Ingredients
- 2 cups shredded cheese (I used a Mexican Blend)
Directions
1
Line a large baking sheet with parchment paper. Pile 1/2 cup of shredded cheese into a 6 inch circle.
2
Bake at 400 degrees until cheese turns slightly brown, around 6-8 minutes (possibly more depending how big your pile is).
3
Build a little platform using large cups and lay spoons or chopsticks across the cups.
4
Use a spatula to transfer the cheese to lay across the suspended spoons. Let cool until firm.
5
Fill with taco meat and toppings! YUM!
This idea is such a game changer if you’re trying to limit your carb intake! I think It’s more exciting than using a lettuce cup. Also, you could definitely make lots of meals into a taco – Sloppy Joe’s, shredded BBQ meat, tuna salad, avocado chicken salad, these would all make great fillings!
You can also try a different shredded cheese like Parmesan, if preferred. There are so many possibilities with this idea!
If you’re interested in purchasing taco holders, Amazon has lots of fun options available! I’m lovin’ these adorable Taco Truck Holders!
NOTE FROM COLLIN: I actually talk about these cheese taco shells as well as why I eat a Ketogenic/Low Carb Diet in my Facebook Live video here! My dad even joins me in the conversation! 😃

Or just leave them flat, and call it a tostada! Will definitely try these!
Neat idea! I will have to try this for our next taco night!
You’ll love it – thanks Mel!
Yes, low carb, but it’s a shell made of CHEESE! Lol, let’s not forget that! And a lot of cheese too!
It all depends what you’re avoiding eating!
Right!? 1/2 cup cheese is 200 – 250 calories right there. Sounds delicious. But, if you’re trying to lose weight you’re better off with the regular taco shell.
On the low/no carb diet- the more fat and calories, the better! It’s the best diet EVER if you love eating a lot like I do 😀
I’ll have to agree with Heather. Low to no carbs but I don’t have to count calories. Just have to make sure I’m eating the proper fat/protein/carb ratios. It’s the way to go.
Actually, the low carb diet disagree with the calorie counting. Cut carbs and you will lose weight. No rice, no wheat flour, no potatoes and no sugar.
I kind of agree! Way too high in fat and cholesterol. Plus unless you plan on eating low carb your whole life it’s not helping with calorie and portion control. My arteries are hardening just thinking about it. Eh, what do I know, I just have my degree in dietetics.
Funny……I ate exactly what the “dietician ” told me to eat and my cholesterol was sky high! Switched to Ketogenic and my numbers have ALL come down over the year!!
Some people *have* to eat low carb for the rest of their lives. A diet that works for you may not work for someone else. I can’t have a lot of carbs or sugars as I’m insulin resistant. Trying to lose weight counting calories I was killing myself and gaining weight! Going low-carb/keto I’ve lost so quickly and feel amazing!!
Just made these the other night and they were so good!! Almost better than regular taco shells!
Great! I agree! 😀
I just made some taco shells from provolone slices the other day and discovered that the edges of my loaf pan is the perfect platform to hang them from! It’s just deep enough and I don’t have to worry about it being unstable! 😊
Oh cool idea Robyn!
I’ve been on a low carb/keto diet for almost a year…what a game-changer! These also work out great making them in a non-stick skillet. I’ve made “pizza” crust by using shredded mozzarella & adding pepperoni. Also, using the same shredded mozzarella, add a little italian seasoning, form into a shell & use that to hold some low carb meatballs. Or you can use the cheddar shells & stuff them with scrambled eggs & bacon. Can you tell I love these things? I could go on forever 😉

Oh wow…that looks amazing! Thank you so much for sharing, definitely going on next week’s dinner rotation. I usually stick with fat head crust, so this will be a nice change! 🙂
Keto for a year myself.
Those a awesome ideas – thanks for sharing!
I am starting the same low carb ketogenic diet. I guess what I’m afraid of I have high cholesterol and 80 more cheese and fats will increase my cholesterol ?
I would even enjoy just the shell 😂
For real! 😀👍
What cheese lover wouldn’t love fried cheese!??!
As someone who eats keto, these are my favorite way to still enjoy tacos.
Great thanks Kasi!
Just ordered the book! Excited to read about the keto diet 😁
I can’t wait to try these!
So Low Carb is your secret to keeping fit and shape. Collin you have a rocking body.
I agree… You look fantastic Collin! 😍
Thank you for the kind words and yes, I eat a pretty low carb/ high fat diet… but I will occasionally indulge in high carb goodies (I’m planning to enjoy some pasta and cake for my upcoming B-Day! 😋)
Happy early birthday, Collin! 🎂
How much cheese can you have? I’m on slowcarb and we can only eat cheese on cheat day 😑
I manage to eat cheese at least once a day…moderation is key. I’ve hit my goal weight so I am into maintenance, a little higher calorie (around 1500-1600) but still under 25 carbs a day. I track my macros on myfitnesspal.
Wow! This is awesome! Game changer! I just started eating low carb a week and a half ago and I am loving it so far! Thanks for the recipe!
Sure! You’ll love it Stephanie 👍
I love the keto lifestyle! If you’re in a rush you can also pop them in the microwave. Or i also make “chips”. Parchment paper, teaspoon full piles of cheese and pop them in for a minute or so. Delish and crispy!
Just curious if you can make these ahead. How long would they last or would they get soggy?
Where did you buy the taco stands in the picture from (with the red/green stands)?
Target dollar spot – they have them sometimes around Cinco de Mayo 😀
This looks so good! What a neat idea, thanks!
I highly recommend looking into iifym or counting your macros. Carbs are not a bad things (if you’re getting them from the right sources and getting fiber along with them). I’ve struggled with my weight and eating disorders for most of mt life (I’m 25 now), but by counting macros and starting to lift my life changed completely. I’ve lot over 30 pounds (which makes a huge difference at 5’1″) and I’m currently in a lean bulk (eating extra calories to gain muscle).
I just wanted to share this for those interested, in no way bashing any one elses lifestyle choices. This is a flexible “dieting” lifestyle. What we eat is comprised of carbs, fat and protein….they all do different important things for our body. Learning the science behind what we eat and what it provides for our bodies is very important in my opinion. I’m a congenital amputee and this has also given me so much confidence to go to the gym and lift, to find a way to make my body work for me.
This looks delish, but seems like it would shatter the second you bite into it…
No, the inside tends to be more chewy – very delicious though 👍🏻
Bummer!! Used wax paper (didn’t know there’s a difference) & they totally stuck!!! 😬
Good to know! I didn’t know there was a difference either!
can you make these ahead and store them without them getting soggy?
I use my silicone mat now instead of parchment. I love baked cheese! Tonight I snipped a stick of string cheese into little slices and made poppers. And the mat wipes right off with a sponge.
Great tip! Thanks for sharing 👍
