Easy Slow Cooker Keto Taco Soup

Ingredients

  • 2 lbs. ground beef
  • 2 cloves garlic, minced
  • 1/2 cup onion, diced
  • 2 tablespoons homemade taco seasoning (THIS RECIPE)
  • 1/2 teaspoon ancho chile powder
  • 2- 10 oz. cans Rotel with green peppers
  • 8 oz. block cream cheese
  • 1/2 cup fresh cilantro, chopped
  • 4 cups beef broth
  • optional toppings: (shredded cheese, jalapeno, and avocado)

Directions

In a skillet on the stove, crumble and cook ground beef, diced onion, and garlic.

Transfer ground beef mixture to slow cooker. Add seasonings and remaining ingredients.

Close lid and cook on low for 4 hours, or 2 hours on high.

Serve with your choice of toppings.

Everyone loves tacos, and this soup has all those delicious flavors in an easy to make soup. And yes, this soup is low carb and keto friendly, but really anyone who loves a hearty ground beef soup would ultimately enjoy this! SO GOOD.

Not a lot of effort required to make this recipe! Yep, that’s also my favorite part! Simply brown your ground meat, throw in the rest of ingredients, and let your slow cooker do its magic. The combination of meat and Rotel diced tomatoes make this hearty soup filling, and all the seasonings provide lots of deep flavor.

Set Instant Pot to “Saute” mode. Brown ground beef with onion and garlic. De-glaze pan with broth. Add the remaining ingredients. Close lid and set cook time for 5 minutes on ‘Soup” mode. Let pressure naturally release for 5 minutes. Stir well and serve with desired toppings.

    This soup is PHENOMENAL! It’s so simple and easy and sooooo addicting. My hubby couldn’t get enough either. I didn’t add cilantro bc I’m not a fan and we didnt top it with anything…the soup was great by itself! I will make this many, many more time! Thank you for sharing.

    I love this recipe! One thing I would add to the recipe is adding salt and pepper to taste when browning the ground beef. Other than that LOVE it!!

    I have made a couple of recipes like this and they taste absolutely wonderful BUT in this one the cream cheese never melted after being cooked in the Crock Pot for six hours on Low and I discarded most of it. In the other recipe made on the stove, I finally got the cream cheese down to small bits. Not real attractive, but it certainly tasted good. What is the secret of getting the cream cheese melted? Thanks.

    I also had a problem with the cheese melting. I now put it in after I brown the ground beef & stir till it melts. Then I add my other ingredients. Are usually cook mine on the stove top and it comes out fine.

    I don’t like it!!
    I’ve made it 3 times in five weeks, followed the super easy directions, and it’s absolutely amazing each time. What I don’t like about it is, because the flavors are just the perfect combination and I can make it original, or hot by whichever Rotel tomatoes I use, I over eat each time, dag nabbit!
