Ingredients

  • 2 lbs. ground beef
  • 2 cloves garlic, minced
  • 1/2 cup onion, diced
  • 2 tablespoons homemade taco seasoning (THIS RECIPE)
  • 1/2 teaspoon ancho chile powder
  • 2- 10 oz. cans Rotel with green peppers
  • 8 oz. block cream cheese
  • 1/2 cup fresh cilantro, chopped
  • 4 cups beef broth
  • optional toppings: (shredded cheese, jalapeno, and avocado)

Directions

In a skillet on the stove, crumble and cook ground beef, diced onion, and garlic.

Transfer ground beef mixture to slow cooker. Add seasonings and remaining ingredients.

Close lid and cook on low for 4 hours, or 2 hours on high.

Serve with your choice of toppings.

Get out your slow cooker and try this easy slow cooker keto taco soup recipe! It’s warm and comforting for cooler evenings and perfect to make any day of the week.

Everyone loves tacos, and this soup has all those delicious flavors in an easy to make soup. And yes, this soup is low carb and keto friendly, but really anyone who loves a hearty ground beef soup would ultimately enjoy this! SO GOOD.

Not a lot of effort required to make this recipe! Yep, that’s also my favorite part! Simply brown your ground meat, throw in the rest of ingredients, and let your slow cooker do its magic. The combination of meat and Rotel diced tomatoes make this hearty soup filling, and all the seasonings provide lots of deep flavor.

Set Instant Pot to “Saute” mode. Brown ground beef with onion and garlic. De-glaze pan with broth. Add the remaining ingredients. Close lid and set cook time for 5 minutes on ‘Soup” mode. Let pressure naturally release for 5 minutes. Stir well and serve with desired toppings.

    What does deglaze with broth mean?

      Hi there! It just means to add liquid and scrape the bits of food from the bottom of pan. It’s especially important in any instant pot recipe where you sauté food first, so your pot will come to pressure without issue.

      I wouldn’t freeze a soup w/ cream cheese (or any other kind of dairy base) b/c it will likely break/curdle when you thaw it. You could brown the beef w/ the aromatics and just freeze that in bulk, then pull it out and finish it off on a day when you want a no-fuss meal.

        you can avoid the separation if you heat the soup straight from the freezer, rather than letting it defrost first and stirring constantly to keep the cream from breaking up. Or what my granny used to do, was reheat her potato soup in double boiler and that wouldn’t result in it curdling.

          I’ve reheated it straight from frozen and it still curdled. Dairy can do that sometimes. I’d rather just make it fresh and refrigerate leftovers, but to each their own.

          Sherri – I know you posted this a while ago, but wanted to let you know that this soup with the cream cheese added would be unsafe to can. Here is a link to the National Center for Home Food Preservation on what can and can’t be safely pressure canned. I’m sure you already know, but for others out there, it is unsafe to water bath can items like this and there is no safe method to can things that have pasta, rice, flour, or dairy products in them. https://nchfp.uga.edu/how/can_04/soups.html

          That being said, I encourage you to give pressure canning some approved soups a try. It is nice to have some meals on hand that can be quickly prepared without taking up freezer space or needing to be defrosted. I’ve canned several different soups and they have come in handy during power outages and nights were I didn’t plan ahead for dinner – or did and the plan fell apart at the last minute.

    you have to be careful with canning. something like a soup usually has to be done in a pressure canner. read up on canning and preserving. a great book is the Ball Blue Book for Canning…it has info on how and what you are able to can. 🙂

    You could pressure can it if you left the cream cheese out (off the top of my head, I would say 90 minutes at 10lb pressure). To be safest, only can recipes that have been tested for safety using USDA standards.

      the only way I got it to NOT clump was to soften it, put it in my ninja with a cup of the soup and after purified, then add it to the soup.
