Homemade Thin Mints (Easy No Bake Cookie)

Ingredients

  • One sleeve of Ritz crackers (or about 27)
  • 1 cup of semi-sweet chocolate chips
  • 1 teaspoon coconut oil, shortening, or vegetable oil
  • 1/2 teaspoon pure mint extract

Directions

In a microwave safe bowl, mix chocolate chips with mint extract and coconut oil.

Microwave in 15 second increments until melted and smooth, stirring each time. My microwave takes about 3 times. (Note: Using some sort of oil helps the chocolate melt smoother with less clumps).

Line a baking sheet with wax paper.

Dip the crackers into the chocolate, turning your hand to drip off the excess chocolate. I used a toothpick since the crackers have small holes in the middle.

Place on top of the wax paper and freeze or refrigerate until set.

If you’re a fan of Girl Scout Thin Mint Cookies, then you are gonna love this recipe! This super quick and easy recipe requires just 4 ingredients (including Ritz crackers) and it requires no baking! These homemade cookies have the same crunch and minty chocolate flavor as the Girl Scout variety – I personally like them right out of the freezer with a glass of milk! πŸ™‚

    I just made these last weekend, but I used the Andes mint chips. The taste is spot on, but at $3/bag at Walmart, not terribly cost effective. I am still enjoying them though πŸ˜‰

    We do something similar but sandwich a thin layer of peanut butter between 2 Ritz crackers then dip in chocolate. We normally use the cheap almond bark, it’s $2 or so for a 1lb package. They disappear fast.

      My mom always did that (no mint in the chocolate for the pb version) and called them butterfingers cookies.

    Sounds like a lot of people like these but I’m skeptical that a Ritz cracker could even remotely taste right in this haha. I may have to try it just out of pure curiosity! FYI Keebler has a cookie called a grasshopper that makes for an okay substitute when not in girl scout cookie season. πŸ™‚

    I make these at Christmas time with mint chocolate chip morsels. They are soooooo good. People who try them cant believe they are made from Ritz.
