Need an EASY low carb or Keto lunch idea? 🥑

You should definitely try this simple 4 ingredient Avocado Chicken Salad! We originally featured this idea in 2014, and it has been one of our most popular recipes.

Today I’m featuring it again with a suggestion on how to easily make Avocado Chicken Salad a delicious low carb or Keto friendly meal!

Tip: Sometimes I’ll use shredded rotisserie chicken to make this salad or canned chicken from the pantry for convenience. You can definitely season it however you’d like, throw in any additional add-ins that sound yummy, and change up the fresh herbs in case you’re not a fan of cilantro.

Avocado Chicken Salad

Serve this delicious four ingredient salad on Keto Fathead rolls for a creative low carb sandwich idea!

Ingredients

  • 12.5 oz can shredded chicken, or shredded rotisserie chicken
  • 1 large ripe avocado
  • 1/2 cup cilantro, chopped
  • 1/2 cup celery, chopped
  • Salt & Pepper to taste

Directions

1

Add ingredients in a bowl and mash with a fork until well combined.

2

Serve as desired.

There are so many ways to serve this chicken salad according to your dietary needs, such as on a croissant, bread, on top of celery, inside a bell pepper, or as lettuce wraps.

Here’s a brilliant low carb and Keto approved sandwich idea!

Make a batch of Fathead dough, then divide dough into fourths and roll into balls. Smash them down a little, and bake on a parchment paper covered pan for about 13-15 minutes at 400 degrees. Then just serve as sandwiches! SO good.

These “sandwiches” are SOOOOOO yummy!

My family is avocado obsessed! I love that you can serve this idea in so many different ways and it still tastes delicious! Such a simple and easy meal. Enjoy!

So wish the fathead dough was dairyfree! Still looking for a good dairy free and grain free dough. This looks yummy!

Thank you so much. I went keto three weeks ago. Ten pounds gone, not going to admit how many more to go. I love your recipes and advice.

  3. Ana

I would love to eat like this. All the food sounds awesome! But I heard if you are an active person you shouldn’t do this. How do you check ketones?

    • Beth

They sell pee sticks. But I definitely don’t think this is healthy for an active person. As long as you are eating wholesome foods, not bingeing on sugar or refined crap, and eating veggies/fruits and whole grains in moderation (along with good fats), you should be good.

So much debate over what is healthy. It’s confusing. Ultimately you just need to eat in moderation what doesn’t inflame your body, what is wholesome and tastes good and will make you feel good and give you energy day to day.

I want to feel better and I do not have the best diet. I’m just not always sure what I should be eating. What you say makes sense though. Fruits veggies and whole grains. I run a lot so it’s not weight loss it’s more just trying to feel better and I know I’m addicted to sugar.

May I recommend a new book by Dr Mark Hyman, ” Food: what the heck should I eat.” Sounds like it would be helpful for you. Dr. Hyman, and the principles of functional medicine eating and lifestyle, have helped me to reverse my autoimmune disorder and get off two prescription medicines.

          • ana

Amy, Thanks I will check it out!

    • Bonnie

You can definitely be active on a keto diet! Fruit and whole grains are NOT keto. I recommend Maria Emmerich’s site, blog and books!

  4. Day-to-day

We’re not on keto but I’m totally down for this yummy food! Thanks for the recipe:)

    • Lina D

Yes don’t have to be on Keto to love this! You’re so welcome 👍

  5. 50ShadesofLipstick

Mayo has zero carbs though…so can’t those eating keto just use that instead?

    • Lina D

      Yes! Add some in 👍

  6. CJ

I make this chicken salad all of the time but never added cilantro…sounds like a delicious thing to add!

  7. Stacy

What about the Avacado going brown?

    • Lina D

If you are worried about having leftovers, it would be easy to just cut recipe in half. I usually plan to not have leftovers with this idea, but if anyone has suggestions let us know! 😀

      • Arie

To keep your avocado from turning brown, put it in a container with a tight fitting lid and store it upside down in the fridge. It works!

        • Lina D

          Thanks for the tip!

          • Kim

Lime juice on the avocado prevents browning, works like a charm when we make homemade guacamole. Never browns in the fridge for days.

  8. Meredith

    Yum! Thanks

  9. Christine

If you have downloaded the Coupons.com app there is a rebate for up to $2.50 for avocados, this recipe does look yummy!

  12. Holly woods

Wondering what the nutritional value per serving is? Also what is a serving size? Btw this is delicious!!!

  13. Christy

Where can I find the nutrition facts on this per serving so I can add to my carb manager app?

    • Lina D

We set this at 4 servings. This is just for the chicken salad.

        Hi Lina,
I believe your fat count is off. 1 large avocado has about 29g fat, so about 7.25g per serving, not 2.

        • Lina D

Ok we will look into this! Thanks

  14. Riley Paula

I have GOT to try this!

    • Lina D (Hip2Save Sidekick)
