Lemon Roasted Chicken Recipe

Looking for an easy to make, light and fresh-tasting meal? Grab a couple of lemons, herbs, and olive oil and check out this recipe for Lemon Roasted Chicken!

Lemon Roasted Chicken

Recipe Inspired by The Comfort of Cooking

Ingredients:

4 lbs. chicken breasts, skinless, boneless
2 lemons, one juiced, one sliced
1/2 of a red onion, sliced
2 Tablespoons Olive Oil
1 Tablespoon Italian seasoning
1 teaspoon garlic powder
1 teaspoon paprika
1/4 teaspoon red pepper flakes
salt & pepper to taste
fresh sprigs of thyme or rosemary (optional)

Directions: Preheat oven to 400 degrees. Mix olive oil, juice from one lemon, Italian seasoning, garlic powder, paprika, red pepper flakes, and salt & pepper. Rub chicken breasts with mixture and place in a baking dish. Place sliced lemons, sliced red onions and any fresh herbs like rosemary or thyme on top if desired. Bake uncovered for about 35-40 minutes until internal temp reaches 165 degrees, and juices run clear. (Note: You can also use chicken pieces bone in with skin – just add about 15-20 minutes more baking time). Garnish with additional fresh herbs if desired. Serves about 6.

Serve with roasted veggies, and or potatoes. On this day, I paired this chicken with roasted Brussels sprouts and a big salad. Such an easy and flavorful meal! Enjoy.

    We made something similar to this before. While it was good, any part that had touched the lemon pith (the white part) was bitter. If I made something like this again I would probably peel the pith off or just use the juice and zest.

    I am making this tonight. I just do not have red onions–looked right at them the other day and forgot. So I will try regular onions and take the suggestion of AGF about the lemon pith.

    Lina- the picture of the dish looks amazing! Curious of the pot/pan you used. Is it cast iron? Cusinart or Le Creuset? If so, how do you like cooking with it? I’m pondering a purchase 🙂

      Hi Patty- this is actually a Mario Battali brand cast iron that is similar to Le Creuset. I received it as a gift years ago and love it! Thanks

        I’ve tried buying different Lodge brand cast iron, and cannot master cooking anything without it sticking terribly. These pots with the enamel coating seem like a good compromise. Le Creuset are so pricey! I spied some Cusinart ones at a TJ Maxx for considerably less, maybe I’ll give em a try. As usual, you’re recipes are a favorite of mine. My 13 yr old son and I made the ice cream cake recipe for the Super Bowl, We made ours with Reeses peanut butter cups. My family LOVED it, my daughter said it was better than DQ! which is her fav 🙂 Thanks again for all you do!
