Low Carb “Fathead” Pigs in a Blanket
Following a low carb diet?
A couple of months ago we shared a popular pizza crust recipe using almond flour and mozzarella cheese that yields both a yummy texture and taste. It’s very simple to make using just a few ingredients, and happens to be the best low carb crust I’ve ever tried! Many of my fellow Hip2Save team members are fans as well! It really is a MUST try idea.
I like that this delicious “bread” isn’t limited to pizza, and can be made into garlic bread, sandwiches, calzones, and even these Pigs in a Blanket using hot dogs or sausages. SO yummy!
Simply prepare your “Fathead” Dough using THIS recipe, divide it into 8 sections, and then wrap them around hot dogs or cooked sausages. It’s a fun meal idea that’s both yummy and low carb!
Low Carb "Fathead" Dough Pigs in a Blanket
yield: 8 SERVINGS
prep time: 20 MINUTES
cook time: 15 MINUTES
total time: 35 MINUTES
You're family won't miss the carbs with these tasty hot dogs wrapped in flavorful grain free dough.
Ingredients
- "Fathead" Pizza Dough using THIS recipe
- package of 8 hot dogs
- Optional* Sesame Seeds or Poppy Seeds
Directions

Separate dough into 8 sections, and roll into balls.

Using your hand, flatten and roll each piece of dough around a hot dog.

Roll in sesame seeds (if desired). Place on a parchment covered baking pan seam side down.

Bake in the oven at 425 degrees for about 14-17 minutes until dough is cooked and slightly brown.

Both the taste and texture are fantastic! My kids really love them also. They re-heated nicely as well for leftovers. If you are eating low carb, this is a great option that would likely please your entire family or party!

I do something like this at Halloween, but make the dough in strips and wrap around. When they come out, use mustard to make eyes “Mummy Dogs” Kids love them, although they won’t eat “pigs in a blanket.” Go figure!

Is there something I can use to substitute for the cream cheese in the dough recipe? I’m allergic.
What cream cheese?
You can actually omit the cream cheese in fathead dough. It won’t be as pliable or squishy to work with but it tastes good too, just a little bit different.
Is the Parmesan cheese that is used in the crust supposed to be shredded or grated? I tried this with shredded Parm and it had an odd texture so just checking.

OMG. My family is new to low carb cooking/eating. I can’t thank you enough for this recipe, My younger son was just diagnosed with diabetes about a month ago. It’s been a challenge to come up with kid friendly, fun, looks and taste good, low carb and still something he wants to eat.

Check out Walmart. They have Nature’s Eats almond flour for $12/2 lbs, the lowest I found yet. I love the brand. I make Paleo brownies, Naan, cobbler, cookies etc.

If you check here on pinterest there are recipes for fathead dough using coconut flour my daughters allergic to nuts too.
I replace almond flour with pork rinds ground up.

Can I substitute almond flour with coconut flour my husband is allergic to almond
I followed the recipe to the letter but the dough “melted” over the top of the hot dogs and spread out, gathering around either side of the dogs. I cannot imagine what I did wrong. Still tasted good but definitely not like bagel dogs.
