Low Carb Zuppa Toscana (Olive Garden Copycat Recipe)

Ingredients

  • 1 lb Italian sausage (I used Mild)
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 1/2 teaspoon red pepper flakes
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 head of cauliflower, cut into florets
  • 16 oz. chicken broth
  • 1 quart water
  • 1 teaspoon bouillon (if desired for extra flavor)
  • 3 cups kale or Swiss chard, chopped
  • 1 cup heavy cream

Directions

In a soup pot on the stove, crumble and brown sausage over medium-high heat.

Add onion and garlic and cook until translucent in color. Season with salt, pepper, and red pepper flakes.

Reduce heat to medium and add cauliflower florets, broth, and water. Stir and add Bouillon, if desired.

Cook on medium heat until cauliflower is tender, about 15-20 minutes.

Reduce heat to low and sprinkle in chopped kale. Pour in cream and stir well. Serve hot.

This popular sausage and potato soup from the Olive Garden is very easy to re-create at home.

Ingredients

  • 1 lb Italian sausage (I used Mild)

Hip tip for making low-carb Olive Garden Zuppa Toscana: If you wanted to make this in your slow cooker, brown the meat with onions and garlic, then place inside the slow cooker along with the broth and cauliflower. Cover and cook on HIGH for 4 hours or LOW for 6-8 hours. Stir in kale and cream at the end. Serve hot.

This soup is AMAZING!

It’s my favorite dish at Olive Garden, and this version tastes so similar, maybe even better! My husband said he liked the cauliflower even more than potatoes, and my kids actually ate the cauliflower without complaining! The leftovers are really great as well.

    I have used canned evaporated milk instead of the heavy cream. Works & tastes great too. Also added a small amount of instant mashed potatoes to give it the potato taste & thicken a bit. Love it!

    This soup is incredible!! Fantastic flavors and textures!! I used organic chicken bone broth instead of stock, no onions. I used Red Swiss chard for the greens and added about 1/2 of a medium diced eggplant as well. So absolutely amazing!!

    I made this last night and I am blown away! This is my favorite soup but I am trying to cut out unnecessary carbs so I gave this a try. I put in the kale and cauliflower at the beginning because I wanted it to get mushy since I’m not a huge fan of cauliflower or crunch kale. I swear I can barely tell the difference between the cauliflower and potatoes! This will definitely be going in my recipe rotation!

    This is delicious! I added a bit of Parmesan cheese to the top once I served it and optional additional red pepper flakes. I had to increase the water and broth to cover the head of cauliflower also, must have been a large cauliflower. So good since I was craving the Olive Garden version. Hit the spot and so filling!
