Mexican Grilled Corn (Must Try Recipe for Your Next BBQ)

Mexican Grilled Corn

Ingredients

  • 6-8 ears of sweet corn
  • 1/2 cup sour cream (or try Mexican Crema)
  • 1/2 cup Mayonnaise
  • 1/2 cup cilantro, chopped
  • 2 cloves garlic, minced
  • 1/4 teaspoon chili powder (or to taste)
  • juice from one lime
  • zest from one lime
  • 1/2 cup cotija cheese, crumbled

Directions

Wash and husk corn. Note: I decided to tie husks at the bottom to use as a handle, but will soak corn next time for 30 minutes before grilling to prevent burning.

Heat grill to about 400 degrees and oil the grates. Grill corn for about 10 minutes turning a couple times until evenly cooked.

Whisk together mayonnaise, sour cream, cilantro, lime zest, lime juice, garlic, and chili powder.

Take corn off the grill and brush on the cream mixture.

Roll corn in crumbled Cotija cheese and add extra chili powder and lime juice if desired. In case you can't find Cotija try Parmesan.

I recently made Mexican Grilled Corn as a side dish and everyone LOVED it!

You’ll be the star of any backyard BBQ with this winning recipe! Corn on the cob is a staple recipe in the summertime, but this steps it up with rich mayo, salty cotija cheese, and fresh cilantro.

Mexican Grilled Corn

    This is one of my FAVS! I live in Texas & we do this often. I don’t like mayo so I use very little almost none & it’s still GREAT!!! Bought ears today since my store has them 8/1.00 ready for Fri night!!!

    FYI Walmart carries pre-grated cotija cheese in a shaker container. Like grated Parmesan cheese. Makes it soooo easy to make this corn.

    I made a dip almost exactly like this for my oldest’s cinco de mayo potluck. i cut the corn off the cob and sauteed them in butter with a jalapeno. Just put it all in a bowl instead of on the cob. My kiddos thought it was weird, but tried and loved it!

    We actually do this all the time but simpler form.
    Boil the corn when done we put McCormick mayonnaise which has lime in it. Top it with Parmesan cheese and salt and chile tajin or Valentina sauce. Sooooo good

    Hello, my husband is Mexican just for it to be accurate to how they make it, all they use for toppings is mayonnaise, grated parmesan cheese and depending on your preference Mexican “chile” hot sauce. (Although I dont use the hot sauce, for your reference alot of Mexicans prefer “Valentina”) Very simple, you just slather mayo all over the corn then sprinkle the parmesan cheese all over.

      Thanks so much! What kind of mayo do you recommend? I’ve found many recipes that said mix mayo with softend butter and this is the first recipe that says mix with sour cream.

    What a tasty recipe! I made this last night with a bag of frozen corn and feta cheese instead of cotija. Used all of the remaining ingredients. I cooked the corn in a frying pan to char it up a bit and then stirred in the sauce and feta. Amazing! I loved the cilantro and lime flavors 🙂
