Need an easy-to-make soup the whole family will LOVE?

You’ve gotta try the latest soup I’ve been crushing on! It tastes just like stuffed peppers – the crave-able meal with rice and tomato stuffed bell peppers – but as a comforting, homemade ground beef soup! My family loved this hearty and filling meal – perfect to warm the soul on a chilly evening.

Hooray for an EASY hearty soup!

This idea uses lots of simple pantry ingredients and comes together quite easily. The process involves browning ground beef, cooking the chopped bell peppers in beef broth with diced tomatoes, and then adding in cooked long grain rice and fresh parsley at the end.

For convenience, you can make the rice a day ahead of time or just make extra rice with your meal the day before so you can just throw some into this soup.

Stuffer Pepper Soup

Such a YUMMY soup!

I’m a big fan of traditional stuffed peppers, and this soup has a deliciously similar taste. It’s still delicious as leftovers the next day, and I really think your family will enjoy this easy dinner idea!

Stuffed Pepper Soup in Cast Iron Pan

P.S. If you’re looking for a quality dutch oven, I enjoy my nice Lodge enameled cast iron (pictured above)! So pretty and works great on the stove and in the oven.

I love this soup…i use hot Italian Turkey sausage and ground turkey mix for extra flavor. I usually cook the rice in the soup on stovetop. More flavorful that way. My bellpepper hating kids even love this soup… can use diff colors of peppers. So good with cheesy garlic bread. Thanks Lina.

Looks great! When do I put the broth in? I’m guessing as part of the second step?

    • Lina D (Hip2Save Sidekick)

With the tomatoes and tomato sauce. Thanks just fixed!
