Make the Ultimate Oreo Icebox Cake

Ingredients

  • 3 cups heavy whipping cream
  • 1 cup powdered sugar
  • 2 teaspoons vanilla extract
  • 8 oz. cream cheese, room temperature
  • 2 tablespoons unsweetened cocoa powder
  • 40 Oreo cookies, divided

Directions

In a large mixing bowl, cream together heavy whipping cream, powdered sugar, vanilla, cream cheese, and cocoa powder using an electric mixer.

In a 10-inch springform pan, spread a small layer of whipped cream filling.

Arrange 16 cookies into a single layer.

Spread half of the remaining mixture evenly on top of the cookies.

Add another layer of 16 cookies, followed by the other half of the remaining whipped cream filling, and spread evenly.

Crush 8 cookies in a food processor (or crush in a plastic storage bag), and sprinkle over the top of the cake.

Place cake in the fridge for about 4 hours or overnight until cookies are softened.

Use a knife to run around the edges of the springform pan, and remove the ring. Drizzle with chocolate syrup if desired, and serve.

Anyone else love a good icebox cake for dessert?

The simplicity of just whipping up some heavy cream and adding a couple of layers of Oreo cookies is the ultimate easy summer dessert idea.

I love that the kids can help make this versatile and appealing summer treat, and there’s no baking involved!

This delicious icebox cake is made with classic Oreo Cookies and chocolate-flavored whipped cream filling. Once everything is in the fridge for a few hours, the cookies soften, and the dessert becomes more like a “cake”. The result is a rich and decadent dessert that tastes fancy, yet is super easy to make!

I used a 10-inch springform pan for this dessert. Once chilled, I ran a knife around the edges, so the sides come off easily for serving. It makes for a beautiful presentation, too.

You can also use a deep pie pan or 8×8 pan in a pinch if you want to serve your icebox cake straight from the pan.

Such an easy & versatile idea!

There are so many variations of this dessert idea you could make. You could use chocolate chip cookies, and omit the cocoa powder for a vanilla filling. Using the Lemon Oreos and adding lemon zest to the filling would be fantastic, too. The possibilities are endless!

Note: You can make this as a no-bake cake like I have here, by placing in the fridge for a few hours or overnight and the cookies will become soft like a cake, or you can freeze it like an ice cream cake if desired. We actually froze the leftovers and then let it thaw for a few minutes to serve again! Yum!

This “cake” is a chocolate masterpiece!

Oh my goodness, my kids loved this dessert. I enjoyed the chocolate creamy combo with the Oreos so much. The texture is like a thick, rich, chocolate whipped cream, with yummy, softened Oreos. What a perfect idea for a fun warm-weather dessert, or perhaps a summer birthday! YUM!

    I make something similar: I take a half gallon of vanilla ice cream, a bowl of extra creamy cool whip and a package of Oreo cookies. Let the ice cream get a little soft. Using a mixer, blend the ice cream and cool whip together. Crush Oreo’s and add to ice cream mixture. Pour into 9×13 pan, cover and freeze. You can also crush additional Oreo’s to garnish the top and drizzle chocolate and carmel over that to make a beautiful dessert. This is one of my families favorite desserts especially in the summer.

    I may have to make this just for the fun of it! I make my own Oreos so that’ll keep it even less processed foods and more homemade. Keto doesn’t allow for it in my carb count, but it looks like too much fun to not at least make it.

    I feel I must provide this Public Service Announcement. This recipe says it provides 8 servings, but doesn’t provide the calorie count. I calculated it. It’s 5,892 calories. That means 736 calories a serving.

      Ouch, that’s a lot of calories! I am actually thinking I could omit the sugar and just do Oreos on the bottom and top. I did something similar with a mint pie and it was soooo good! I hadn’t thought of using a springform pan. It’s a great idea.

    I made this first time last night, let it set for about 12 hours in the fridge but I feel like I didn’t get the consistency of finished product right. Mine is still very mushy almost like thick pudding when the pictures above look more solid. Did I perhaps not mix it enough before spreading in to the pan? I moved the butter knife around the edge but that made me not wanna remove the wall of the spring form so I spooned it out.

    You don’t mention freezing it. Should it be frozen for 12 hours? Ice box cake implies freezer, correct?

      No, this is more like a no-bake cake and the cookies get soft and cake-like. I’m sure if you wanted it frozen harder it’d be great as well.

          Hi Jen sorry for the confusion. I added a note that I made this as a no-bake soft cookie experience, and linked the original recipe that I adapted, so you can see. Also, I did mention that I froze the leftovers and they were also very yummy. So I feel like it can be a frozen cake if you want instead! Hope that helps clarify.

      Back when these types of recipes became popular ice boxes were all folks had they would eventually evolve into a refrigerator run by electric. I’m 78 and I can remember an ice man carrying a block of ice on his shoulder and putting it into my grandmothers Ice box. At times I still forget and call our fridge an ice box completely confusing my grandchildren.

    I make an ice cream Oreo dessert too. Crumbled Oreos and melted butter for crust in 9×13 pan, layer of butter pecan ice cream, layer of fudge sauce, layer of cool whip, sprinkle of more crumbled Oreos and melted butter mixture on top, then freeze. It’s been a family favorite for more than 30 yrs! Ugh, makes me feel old.
