Grain-Free Almond Chicken Tenders

If you’re looking for an easy and healthy shake and bake chicken recipe, try this tasty grain-free version made with almond meal. This super quick and kid-approved family meal uses just a few simple ingredients and will surely become a family favorite!

Easy Baked Almond Meal Chicken Fingers

Adapted from

4 skinless boneless chicken breasts, sliced into chicken tenders
3/4 cup almond meal/flour
1 teaspoon ground paprika
1 teaspoon ground garlic
1/2 teaspoon salt
1/2 teaspoon pepper
Easy Gluten-Free Meal Idea Almond Chicken Tenders
Directions: Using a small paper bag or Ziploc bag, shake seasoning and almond meal together. Place chicken tenders in bag and shake until well coated (I recommend only placing 1-2 chicken tenders at a time in bag). Place the coated chicken on a greased baking sheet. For best results, use a metal cookie rack stacked on top of a cookie sheet to elevate chicken for even cooking. Bake at 350 degrees for about 25-30 minutes until internal temperature reaches 165 degrees. Tip: If you like crispier chicken, spray cooking spray on each piece of chicken before placing in the oven.
