Caramel Corn in the Microwave

Ingredients

  • 4 quarts popped corn (2 bags of microwave popped corn or equivalent in air popped)
  • 1/2 cup butter
  • 1 cup brown sugar
  • 1/4 cup light corn syrup
  • 1 teaspoon Vanilla Extract
  • 1/4 teaspoon salt
  • 1/2 teaspoon Baking Soda

Directions

Pop your popcorn and remove any un-popped kernels. In a large paper bag (I actually like to use two paper bags and double bag them), spray a little Pam nonstick spray. Then place the popcorn inside the paper bag.

In a microwave safe bowl, combine butter, sugar, light corn syrup, salt and vanilla extract. Microwave for 3 minutes and take out to stir. Return mixture to the microwave for another 60 seconds. Remove and add baking soda- don't forget this step!

Pour syrup mixture over the popcorn, roll the top of bag to close and shake well to coat. Place bag in microwave for one minute. Remove, shake bag well again and return to microwave for another minute.

Dump the caramel corn onto cookie sheets covered with wax paper until set. Serve or store in airtight container.

caramel popcorn recipe

If you have a sweet tooth like me and you love snacking on popcorn, this recipe is for you! Made in the microwave using a grocery store paper sack for easy clean up, this Caramel Corn recipe calls for just a few ingredients and only takes about 15 minutes to prepare. Recipe adapted from AllRecipes.com.

    If you want it to be healthy, don’t use the microwave bagged popcorn. It causes cancer.

      Thanks Flgr! This particular organic brand contains only organic popcorn, Palm oil, and salt. Use what you’re comfortable with of course 🙂

    Sounds yummy!! Love the recipes! Just make popcorn in a brown lunch bag in the microwave and skip using prepackaged microwave bags. Frugal and easy!

    I made caramel corn yesterday. The recipe was almost exactly the same from my Better Homes and Gardens cookbook but you made the candy on the stove and then after mixing put it in the oven for 15 minutes, stirred and five more. I added almonds and it is delicious. I will have to try it out in the microwave. Thanks!

    Did you know you can make your own microwave popcorn? Just use a brown paper bag, put 1/4 cup kernels in it fold top down twice then use the microwave popcorn setting, works like a charm. Sometimes I add more time on and stop when the popping slows. Much more healthy than the store bought and cheaper too!

    how does one measure 4 quarts popped popcorn ?

      1/2 cup of kernels should yield about 16 cups of popcorn which should be about the same as 2 microwave bags of popcorn. Hope that helps. 👍🏻
