What is the difference between refined and unrefined? Do coconut oil ever go rancid?

I think this was at cosco but I ended up buying the Kirkland brand cuz it is cold pressed which is the best quality. Cosco stopped selling the Betterbody brand that I’ve gotten the last 3 years. And the popcorn is awesome! I use coconut oil as well.
