I wanted to give a shout out to a company with great public relations. I contacted Barilla months ago thanking them for making my favorite gluten-free spaghetti noodles and suggesting that they make lasagna noodles too.
Well today, a box showed up at my door with their newest product… gluten-free oven ready lasagna noodles and a nice letter. Way to go Barilla! Thanks for all you do. I’ve been a Hip2Saver for years!

Hungry Jack does the same thing. I wrote to ask why they switched their bottle style, making it non-microwaveable. They apologized but sent a free coupon for a bottle about a year later when they brought back the old microwaveable bottles.

?- How do you keep gluten free noodles from getting so mushy? Am I overcooking them? Each time I try them they go mushy. Suggestions?
I use a larger pot than usual and use more water as well. Definitely do not overcook, i usually undercook a minute. Costco sells Ramon Rice Noodles by Lotus Foods, by far my favorite for gluten free noodles.
I wish they made large shells in gluten free!!! I miss stuffed shells!!!
I use lasagna noodles instead of shells and roll up the ricotta, spinach, mozzarella in the cooked lasagna noodles. Tinkynada makes GF shells now.
I did a Buzz campaign for Barilla gluten free pasta a few months ago and had the opportunity to try the gf spaghetti and fettuccine noodles. They were both excellent and each package made quite a lot of pasta. Neither one was mushy, even as leftovers the next day. It is available in quite a few varieties, and several that I had not seen before such as the fettuccine and angel hair. It is our regular gluten-free pasta now. It’s nice to have a product that you can count on.
They do make shells to make stuffed shells with. A company called tinkyada. They’re based out of Canada. They’re a brown rice pasta. I found them at a co-op but I’m sure if you searched online you’d find them.
How nice. And good to know. I will look for the lasagna noodles now. One more meal to enjoy. I was substituting sliced polenta for the noodles. Now have more options
Oh wow! I can add veggie lasagne back into our rotation. I will look for this in the store.
